Paleo Beef Ribs

Paleo Beef Ribs

Ingredients:
Beef Ribs 3-5 lbs

Dry Rub 2 tablespoons each:
Smoked Paprika
Ground Garlic
Black Pepper
Onion Powder
Sea Salt course ground
Cayenne Pepper (as desired, don't be a puss)

Rub Ribs down with Dry Rub and refrigerate at least day before or up to 3 days prior. Ideal: cook in smoker low on 225 degrees for 3 hours, if not in oven covered with foil same time and temperature. Nice CrossFit snack!

Paleo Pizza

Paleo Pizza

Crust Ingredients:
Almond Flour 1 1/2 cups
Coconut Oil 1/4 cup
Eggs 2 large

Combine all crust ingredients and then press on bottom and slightly up edges of 9 inch pie plate. Bake crust at 350 degrees for 7-10 minutes until golden.

Filling Ingredients:
Ground Meat 1 lb (Beef, Pork, Turkey)
Sausage 1/2 lb (Natural/No Sugar added) removed from casing
Onions 1 large chopped
Peppers 1 cup Any Type Fresh
Chopped Tomatoes 1 cup
Olive Oil 2 tablespoons
Toppings: Olives, Hot Peppers

Sauté meat in Olive Oil in frying pan until cooked thru. Add Onions and Peppers and continue to cook thru. Add half if the Tomatoes. Place filling into crust, took with remaining Tomatoes and toppings. Bake at 350 degrees for another 15 minutes. Allow to set for 10 minutes before cutting and serving. Manga!!!

Ingredients:
Enjoy Life Chocolate Chips 1 1/2 cups
Coconut Oil 1/4 cup
Coconut Cream Manna 1 tablespoon
Agave/Honey 2 table spoons
Peppermint Extract pure 1/2 teaspoon

Bring Coconut Oil & Cream
Manna to room temperature; slightly melted. Mix Peppermint Extract and Agave/Honey into mixture until cream forms. Next melt Chocolate Chips in double boiler or microwave. Place rounds of melted Chocolate on parchment paper then freeze until hardened. Fill with mint center and freeze again. Finally layer more melted Chocolate on top and freeze one last time. Store in refrigerator.

Soul Food

Ingredients Chicken:
Chicken boneless breast 1 lb
Pecans 1/2 cup
Walnuts 1/2 cup
Coconut flour 1/4 cup
Smoked Paprika 2 tablespoons
Poultry Seasoning 1 tablespoon all natural no preservatives
Eggs 4 large beaten

Grind all nuts & spices in food processor until fine mixture. Dip chicken in beaten eggs then coat with mixture. Bake on 375 for 30-35 minutes until crispy on foil lined baking sheet.

Ingredients Waffles:
Almond flour 1 1/2 cups
Coconut Flour 1/4 cup
Eggs 4 large
Coconut Milk 1/2 cup
Vanilla 1 tablespoon
Baking soda 1/4 teaspoon
Agave/honey 2 tablespoons
Water 1/4 cup

Mix all ingredients until batter forms. In waffle maker on medium heat make waffles until golden brown.

Serve with any type of egg for extra protein. Never let Doubters tell you that you cannot have some thing just because you're on Paleo. They can suck it!!!

Ingredients:
Any kind of Chicken
Bacon strips (1 slice per serving Chix)
Dry Rub Seasoning (all natural, no sugar, no preservatives)
Olive Oil for pan

Simply rub Dry Seasoning on Chicken then wrap with slice of Bacon. Place in baking pan and bake at 350 degrees for 30-35 minutes. Come on people, you can't get much easier than this.

Paleo Chocolate Cake

Paleo Chocolate Cake

Yes, you can have your cake and eat it too!!!

Ingredients:

Cocoa Powder 1 cup
Coconut Flour 1 cup
Baking Soda 1 teaspoon
Eggs 6 large
Coconut Milk 1 1/2 cups
Coconut Oil 1/2 cup
Agave/Honey 1 1/2 cups
Vanilla 2 tablespoons
Sea Salt 1/2 teaspoon

Mix all dry ingredients in bowl then set aside. Next whip eggs in standing mixer or with mixer until stiff peaks form (yeah baby!). Slowly add the remaining wet ingredients and continue to whip until light and fluffy peaks form again. Add the dry ingredients in 1/4 cup incriminates. Mix until batter completely blended with no lumps. Let sit 5 minutes and mix again one more time after coconut flour has chance to expand. Bake for 30-35 minutes in 350 degrees preferably in two 9 inch parchment lined pans. Allow to cool 10 minutes then invert and remove parchment paper. Allow to fully cool before frosting.

So Many Options for Frosting & Fillings!!
Be creative with allowed Paleo ingredients.

Chocolate Frosting:
Enjoy Life Chocolate Chips 2 cups
Coconut Oil 1 cup
Vanilla 2 tablespoons

Melt chocolate chips slowly in double boiler or microwave incriminates of 30 seconds while stirring. Melt Coconut Oil and add with Vanilla to Chocolate. Transfer to standing or hand held mixer. Continue to beat until mixture is whipped into fluffy bliss!

Or
Chocolate Frosting:
Almond Butter 1 1/2 cups
Cocoa Powder 1/2 cup
Agave/Honey 1/2 cup

Melt Almond Butter and Agave/Honey. then add Cocoa Powder. Simply mix until creamy.

All and all time consuming but on level of difficulty it's not bad at all!

Ingredients:
Berries fresh 2 cups rinsed/dried
Sliced Almonds 1/2 cup
Almond Flour 1/2 cup
Coconut Oil 2 table spoons
Dates 10 pitted chopped
Lemon 1 fresh large juiced

Place cleaned berries on bottom of baking dish greased with a little coconut oil. Then squirt lemon juice over berries. In food processor pulse remaining ingredients until a crumble firms. Layer crumble mixture evenly over berries. Bake at 350 degrees for 20 minutes. Allow to rest 7-10 minutes before serving.

Ingredients:
Sausage fresh 2 lbs
Mushrooms 1 cup sliced
Peppers 1 cup sliced
Onion 1/2 cup sliced
Cauliflower 1 head chopped 1 inch pieces
Broth Vegetable all natural 1 cup
Olive Oil 2 teaspoons

Sauté Mushrooms, Peppers, And Onions in Olive Oil in frying pan. Meantime boil Cauliflower in Broth until fork tender. Then either grill or pan fry Sausage. Set Sausage aside. Using food prices for or hand mixer mash Cauliflower to resemble mashed potatoes. Assemble however but damn good to soak up any alcohol from St Patty's Day!

Ingredients:
Corn Beef cooked 3 oz
Onion 1/2 cup sliced
Sweet potato 1/2 cup sliced
Olive Oil 1 teaspoon
Egg 1-2 large cooked any way

Sauté Onions in Olive Oil until translucent. Add Sweet Potatoes and cook until tender and browned. Add Corn Beef toss and brown also. Cook eggs and place atop the hash. This is a great start to a fun filled day of responsible drinking.

Brew Expresso and froth Coconut Milk preferably in Expresso maker; if not kick it old school and make it happen. Add Steevia to Expresso and then add Ciroc. Top with milk froth and sip the day away...

Paleo Corn Beef and Cabbage

Paleo Corn Beef and Cabbage

Ingredients:
Corn Beef Brisket 5 lbs all natural/gluten free version w/seasoning packet
Dry Mustard 1 teaspoon
Beef Broth 2 cups all natural
Carrots 1 cup peeled & sliced
Parsnips 1 cup peeled & sliced
Celery 1 cup peeled & sliced
Onions 3 large cut into 1 inch pieces
Cabbage 1 large head cut into 2 inch pieces
Sea Salt & Fresh Cracked Black Pepper 1 teaspoon each

Rub Brisket with season packet and dry mustard (smack it around a little to get the spices in there).  In a large baking dish place all Vegetables on bottom and Brisket on top.  Add Broth and cover with foil.  Bake on low 300 degrees for at least 4-6 hours.  Let meat rest 15 minutes before slicing.

Paleo Sticky Banana Pie (Raw/Vegan)

Ingredients:

Bottom Layer:
Banana 1 large
Dates 3/4 cup
Nuts (Walnuts/Cashew/Almonds) 1/2 cup (lil more if preferred for crunchy)
Pinch of Sea Salt

Top Layer Frosting:
Banana 1 large
Agave/Honey 4 tablespoons
Almond Butter 5 tablespoons
Cocoa Powder 1/4 cup

In Food Processor blend all ingredients for Bottom Layer until a dough forms.  Press on bottom of 9x9 inch pan or pie plate.  Line top with parchment paper and flatten out layer until smooth.  Place in freezer while preparing the next layer.  Rinse Processor and dry before adding remaining ingredients for Top Layer; pulse and scrap down until a consistency of frosting is achieved.  Try not to dive into the mixture as it is dangerously good!  Remove parchment paper from Bottom Layer and smooth the Top Layer Frosting; then place back in the freezer again for 15 more minutes.  Store in refrigerator; very sticky.

Chicken Thighs 3 lbs skinless

Sauce:
Oranges 2 medium juiced
Lemon 1 tablespoon juice
Olive Oil 2 tablespoons
Thyme 1 teaspoon dry
Basil 1 teaspoon dry
Orange Zest 1 tablespoon
Sea Salt & Cracked Black Pepper 1 teaspoon each

Blend all Sauce ingredients in blender until smooth.  Pour over Chicken and marinate over night if possible or minimum of 2 hours.  Bake Chicken in oven on 375 degrees for 35-40 minutes until tender.  Can also be used on Pork or Chicken Breast.  Simple yet delicious!

Ingredients:
Almond Flour 1 1/2 cups
Sweet Potato 1 large baked & mashed
Carrots 1 cup minced
Dates 1/2 cup chopped
Nuts (Walnuts/Almonds) 1/2 cup chopped
Raisins 1/2 cup
Agave/Honey 2 tablespoons
Vanilla pure 1 tablespoon
Cinnamon 2 tablespoons
Ginger 1 teaspoon
Baking Powder 1 teaspoon
High Quality H2O (Water) 3 tablespoons

In food processor chop Dates vigorously until finely minced.  Then add Sweet Potato and Carrots and continue to blend until forms a dough like formation.  Add nuts and raisins and pulse a few more times.  Transfer to mixing bowl and add remaining ingredients and mix batter.  Place in cup cake line tins yields 12 good sized muffins.  Bake at 325 degrees for 30-35 minutes.  Great for grab and go in morning obviously hence the name; but yes, also word play on Glory Hole!

Paleo Meatballs

Ingredients:

Meatballs:
Ground Meat (Beef, Veal, Pork) 2 lbs
Sausage casing removed 1 lb
Almond Meal 1 cup
Eggs 4 large
Onion 1 large minced
Garlic 2 cloves minced
Basil fresh 1 tablespoon chopped
Parsley 1 teaspoon

Sauce:
Tomato Puree 3 cups
Tomato Paste 1 tablespoon
Basil fresh 3 tablespoons
Dry Italian Seasoning 1 teaspoon
Sea Salt & Black Pepper 1 teaspoon each

Spagetti:
Spagetti Squash 2 large
Olive Oil 2 teaspoons

Mix all Meatball ingreidients together and roll to form balls (Giggity).  Bake Meatballs at 350 degrees on cookie sheet lined with parchment paper for 30-35 minutes until cooked thru; depending on size. 

Meantime boil Spagetti Squash in large pot until tender.  Drain and allow to cool before scraping Spagetti Squash out.  Toss with olive oil and set aside. 

In a large sauce pot place all Sauce ingredients together on low heat.  Once Meatballs done cooking in over place in Sauce and continue to cook for at least 30 more minutes.  The longer the better here to allow the Meatballs and Sauce to get to know eachother and form a relationship.  Serve over Spagetti Squash.

Paleo Chewy Brownies

Ingredients:
Almond Butter 1 1/2 cups
Agave/Honey 1 cup
Cocoa Powder 1/2 cup
Vanilla Extract Pure 2 tablespoons
Espresso Powder 1 teaspoon
Coconut Flour 1 1/2 tablespoons
Baking Powder 1/2 teaspoon

Topping:
Sliced Almonds 1/2 cup

Mix all ingredients together using an electric or standing mixer.  This will take time to get all ingredients blended (you can even heat up the Almond Butter and Agave/Honey a little to help).  Once you get a sticky consistency in the batter, place in parchment lined baking pan.  Use 9 x 9 for medium sized brownies.  Bake 25 minutes at 325 degrees.  Then top with Sliced Almonds and continue to back another 7-10 minutes until done.  May all your chocolate dreams come true!

Paleo Coconut Shrimp with Spicy Dipping Sauce

Ingredients:
Shrimp 2 lbs large de-veined
Coconut Flour 2 teaspoons
Coconut Shredded Unsweetened 1 cup
Eggs 4 large
Coconut Milk 1/4 cup
Coconut Oil 1/2 cup
Cayenne Pepper 1 teaspoon
Sea Salt & Fresh Cracked Pepper 1 teaspoon each

Sauce:
Coconut Milk 1/4 cup
Roasted Red Peppers 1/4 cup
Cayenne Pepper 1/2 teaspoon
Smoked Paprika 1 teaspoon
Sea Salt & Fresh Cracked Pepper 1 teaspoon each

Melt Coconut Oil in pan on Medium heat.  Whip eggs with Coconut Milk in bowl.  In a separate bowl mix Coconut Flour & Shredded Unsweetened Coconut with all spices.  Add clean de-veined shrimp to egg and milk mixture and let soak in for few minutes.  Then dredge in the flour mixture and place in melted oil to fry.  Continue to cook until shrimp are pink and brown.  Place on paper towel lined plate to remove excess oil.  Can be reheated on cookie sheet on 350 degrees for 3-5 minutes before serving.

For sauce blend all ingredients until creamy smooth.  Then cook on stove top low heat in sauce pot until a slow roll forms.  Remove from heat immediately so you do not scorch sauce.  Can use sauce heated or cool in fridge prior to serving.

Ingredients:

Chicken Wings Fresh or Frozen thawed 3 lbs

Sauce:
Garlic 2 cloves minced
Honey 3 tablespoons
Apple Cider Vinegar 2 tablespoons
Ginger 1 teaspoons fresh grated preferred
Coconut Oil 1 tablespoon melted
Garlic Salt 1 teaspoon

Toss all ingredients into plastic bag and marinate chicken wings over night if possible; if not minimum of 2 hours prior to cooking.  Then place in shallow baking pan and bake covered with foil at 350 degrees for 35-40 minutes or grill for 12-15 minutes on low heat.  Sauce easily doubles which you can reserve for extra dipping!

Ingredients:
Almond Flour 1 cup
Coconut Flour 2 tablespoons
Eggs 4 large
Almond/Coconut Milk 1/2 cup
Banana 2 medium
Enjoy Life Chocolate Mini Chips 1/2 cup
Vanilla 1 tablespoon
Baking Soda 1 teaspoon
Unsweetened Coconut Flakes 1/4 cup

Mash banana or mix in food processor.  Fold in all remaining ingredients except coconut flakes.  Spoon in 3/4 full into foil lined (best for not sticking) cup cake tin.  Sprinkle top of each cupcake with coconut flakes.  Bake at 350 degrees for 17-20 minutes.  Makes 12 cupcakes.

Ingredients:
Chipolte Smoked Peppers 1 can
Roasted Red Peppers 1/2 cup drained
Cayenne Pepper 1/4 teaspoon
Smoked Paprika 1 tablespoon
Sea Salt 1 teaspoon
Coconut Oil 1 tablespoon melted

Blend all ingredients in blender until smooth consistency.  Add to burgers, grilled meat/chicken, chili, or anything else that needs a kick!  Store in refrigerator for 3 weeks.

Ingredients:
Almond Flour 1 cup
Pumpkin 1 cup
Coconut Milk 1 cup
Eggs 3 large
Vanilla 1 teaspoon
Cinnamon 1 teaspoon
Coconut Oil 2 tablespoons

Mix all ingredients using whisk or mixer together until no lumps in batter.  Heat skillet to low/medium heat is achieved.  Grease skillet with coconut oil and then spoon mixture onto skillet slowly.  After bubble appear flip pancakes and finish cooking until golden brown.  Serve with a little pure maple syrup if desired (pancakes are already sweet so be conservative).

Paleo Acorn Meat Boats

Paleo Acorn Meat Boats

Ingredients:
Acorn Squash 2 medium sized
Ground Meat (Beef, Pork, Turkey) 1 lb
Olive Oil 1 tablespoon
Pepper (Any Color) 1 small chopped
Onion 1 small diced
Garlic 1 clove diced
Tomato Paste 2 tablespoons
Tomato Puree 1/2 cup
Basil (Fresh/Dried) 1 tablespoon
Coconut Milk 1-2 teaspoons to drizzle on top

Cut acorn squash in half, remove seeds & pitting.  Bake upside down in non stick pan on 350 degrees for 20 minutes until flesh starts to soften but not over done.  Meantime saute' pepper, onion, garlic in olive oil in skillet on medium heat until tender.  Add meat, basil, and tomato paste; cook until brown and done.  Allow meat to cool slightly after cooking.  When acorn squash done cooking fill with meat mixture and top with tomato puree.  Continue to bake another 10 minutes.  Drizzle with coconut milk just before serving (the illusion of cheese).

Ingredients:
Almond Flour 1 cup
Coconut Flour 1/4 cup
Dried Cranberries 1/2 cup
Cashews/Macadamia/Walnuts 1/2 cup chopped
Baking Soda 1 teaspoon
Eggs 2 large
Agave/Honey 2 tablespoons
Vanilla pure 1 teaspoon
Cinnamon 1 teaspoon
Sea Salt 1 teaspoon

Mix all ingredients together until forms a semi hard (Giggity) dough.  Form into 1 inch balls rolling into your hands.  Place on parchment lined cookie sheet and flatten with back of hand to make shape consistent with round cookie.  Bake at 350 degrees for 12-15 minutes until golden brown.  Great for breakfast or with coffee in afternoon as snack.

Blend all ingredients in blender until smooth.  Serve over ice and decorate with Enjoy Life Mini Chips; serves 2 drinks.  Get funky and blend chips into mix also!

Ingredients:
Bacon 1 lb cooked until crisp but not over done
Enjoy Life Chocolate Chips 2 cups

Cook bacon as per instructions on package and place on plate covered in paper towels dabbing to get any excess dripping off and pat dry.  Place chocolate chips in microwave safe bowl; heat in intervals of 30 seconds, stirring in between until all chips smooth and melted.  Dip cooled bacon into chocolate and place on parchment lined cookie sheet.  Place in refrigerator to firm up for few minutes before serving. This was is as yummy as it is easy!

Paleo Meatloaf

Ingredients:
Ground Meat (Beef, Pork, Turkey) 2 lbs
Almond Meal 1 cup
Onion 1 small diced
Garlic clove 1 diced
Eggs 2 large
Tomato Paste 2 tablespoons
Dried Italian Spice blend 1 tablespoon
Sea Salt & Fresh Cracked Pepper 1 teaspoon each

Reserve for top while baking:
Beef Broth 1 cup (organic or natural ingredients only)

Mix all ingredients except broth and place in pan.  Cook for 40 minutes at 350 degrees covered in foil.  Every 10 minutes add a few spoons of broth over meatloaf and recover & continue to bake.  Repeat this process until all the broth is used and seeped into meatloaf.  This will keep it moist.

Ingredients:
Cocoa Powder 1/4 cup
Coconut Oil 1/4 cup
Coconut Manna/Concentrate 2 tablespoons
Honey or Agave 1/4 cup
Walnuts or Pecans 1/2 cup chopped
Vanilla 1 teaspoon

Melt Coconut oil and coconut manna/concentrate in microwave 30 seconds or on double burner.  Add remaining ingrediants except nuts and whip or use standing mixture until creamy texture forms.  Once texture reflects desired creaminess add nuts.  Place in 8x8 pan for thick or 9x9 pan for thinner portions or even lined mini cup cake tin or candy molds work well.

Ingredients:
Cabbage Leaves 10-15
Ground Meat (Beef, Pork, Turkey) 1.5-2 lbs
Olive Oil 2 tablespoons
Garlic 1 clove chopped
Onion 1 large chopped
Carrots 1/2 cup shredded & chopped
Peppers 1/2 cup chopped
Tomatoes or Tomato Puree 1 cup (section out into 1/2 each)
Red Curry Paste 1 teaspoon
Spices; Basil, Oregano, Sea Salt, & Fresh Cracked Pepper

Saute garlic & onions in olive oil until translucent.  Add ground meat cook until browned.  Add remaining ingredients and 1/2 cup of tomatoes; cook until vegetables are tender.  Mean while boil cabbage leaves until al dente.  Use your palm to hold cooked cabbage leaves and add 2 tablespoons of meat mixture to each leave and wrap like a burrito.  Place each wrapped leave into a bake plate.  Cover with remaining tomatoes and cook at 350 degrees for 20 minutes.

Parsnips Olive Oil
Smoked Paprika

Cut Parsnips length wise into fry shapes or wedges.  Toss with olive oil and spices.  Bake on cookie sheet at 400 degrees for 17-20 minutes until crisp.

Paleo Marshmallows



Paleo Marshmallows


Ingredients:

Plain gelatin 4 packs
Vanilla 1 tablespoon
Honey 1 cup
Water 1 1/2 cups

Whisk gelatin into water in a separate bowl.  In a sauce pan add honey and vanilla while continuing to whisk and turn heat up to medium to a slow steady boil (do not stop no matter how much your arm hurts think of it as a mini WOD).  Here is where you need help with a mixer either hand or standing is best but start the mixture on medium.  Have cold mixture ready to go.  Carefully transfer hot liquid very slowly, a little at a time in a steady stream; touching the side of the bowl so you do not scorch the gelatin.  Gradually turn up the speed on the mixture and be patient as you will need to keep it going for quiet some time until you see a sticky, fluffy, consistency start to form.  Once it actually looks like marshmallows (about 30-45 mins of mixing) then transfer to a parchment lined container or pan.  Refrigerate at least 5 hours before cutting.

You can make Rocky Road Candy, Dip in chocolate & nuts, or melt into hot cocoa too.  Also a multitude of varied options by adding natural pure flavoring such as peppermint into the mixture.

Ingredients:

Boiled Spagetti Squash 1 cup
Olive Oil 2 tablespoons
Garlic 2 cloves
Onion 1 medium
Chopped Tomatoes 1 cup
Shrimp 1 pound
Parsley 2 pinches
Coconut Milk 1/4 cup
Cayenne Pepper to taste (optional)

Boil spagetti squash until fork tender in sea salt approximately 20 minutes.
In large skillet heat olive oil and saute garlic and chopped onions.  Add tomatoes & shrimp; cook about 3-4 minutes until pink.  Continue simmering.  Lower heat and add coconut milk, parsley & cayenne pepper.

Eating clean doesn't mean eating boring.
