Paleo Acorn Meat Boats

Paleo Acorn Meat Boats

Acorn Squash 2 medium sized
Ground Meat (Beef, Pork, Turkey) 1 lb
Olive Oil 1 tablespoon
Pepper (Any Color) 1 small chopped
Onion 1 small diced
Garlic 1 clove diced
Tomato Paste 2 tablespoons
Tomato Puree 1/2 cup
Basil (Fresh/Dried) 1 tablespoon
Coconut Milk 1-2 teaspoons to drizzle on top

Cut acorn squash in half, remove seeds & pitting.  Bake upside down in non stick pan on 350 degrees for 20 minutes until flesh starts to soften but not over done.  Meantime saute' pepper, onion, garlic in olive oil in skillet on medium heat until tender.  Add meat, basil, and tomato paste; cook until brown and done.  Allow meat to cool slightly after cooking.  When acorn squash done cooking fill with meat mixture and top with tomato puree.  Continue to bake another 10 minutes.  Drizzle with coconut milk just before serving (the illusion of cheese).
