Plain gelatin 4 packs
Vanilla 1 tablespoon
Honey 1 cup
Water 1 1/2 cups
Whisk gelatin into water in a separate bowl. In a sauce pan add honey and vanilla while continuing to whisk and turn heat up to medium to a slow steady boil (do not stop no matter how much your arm hurts think of it as a mini WOD). Here is where you need help with a mixer either hand or standing is best but start the mixture on medium. Have cold mixture ready to go. Carefully transfer hot liquid very slowly, a little at a time in a steady stream; touching the side of the bowl so you do not scorch the gelatin. Gradually turn up the speed on the mixture and be patient as you will need to keep it going for quiet some time until you see a sticky, fluffy, consistency start to form. Once it actually looks like marshmallows (about 30-45 mins of mixing) then transfer to a parchment lined container or pan. Refrigerate at least 5 hours before cutting.
You can make Rocky Road Candy, Dip in chocolate & nuts, or melt into hot cocoa too. Also a multitude of varied options by adding natural pure flavoring such as peppermint into the mixture.
