Paleo Morning Glory Muffins

Paleo Morning Glory Muffins

Ingredients:
Almond Flour 1 1/2 cups
Sweet Potato 1 large baked & mashed
Carrots 1 cup minced
Dates 1/2 cup chopped
Nuts (Walnuts/Almonds) 1/2 cup chopped
Raisins 1/2 cup
Agave/Honey 2 tablespoons
Vanilla pure 1 tablespoon
Cinnamon 2 tablespoons
Ginger 1 teaspoon
Baking Powder 1 teaspoon
High Quality H2O (Water) 3 tablespoons

In food processor chop Dates vigorously until finely minced.  Then add Sweet Potato and Carrots and continue to blend until forms a dough like formation.  Add nuts and raisins and pulse a few more times.  Transfer to mixing bowl and add remaining ingredients and mix batter.  Place in cup cake line tins yields 12 good sized muffins.  Bake at 325 degrees for 30-35 minutes.  Great for grab and go in morning obviously hence the name; but yes, also word play on Glory Hole!
