Paleo Pumpkin Pancakes

Paleo Pumpkin Pancakes

Almond Flour 1 cup
Pumpkin 1 cup
Coconut Milk 1 cup
Eggs 3 large
Vanilla 1 teaspoon
Cinnamon 1 teaspoon
Coconut Oil 2 tablespoons

Mix all ingredients using whisk or mixer together until no lumps in batter.  Heat skillet to low/medium heat is achieved.  Grease skillet with coconut oil and then spoon mixture onto skillet slowly.  After bubble appear flip pancakes and finish cooking until golden brown.  Serve with a little pure maple syrup if desired (pancakes are already sweet so be conservative).
