Paleo Pecan Cinnamon Crumb Cake

Crumbly goodness in this moist cake.  We were getting a visit from some of our favorite Rhodies (people from Rhode Island).  So of course I had to make something special!

Ingredients Cake:
Almond Flour 1 cup
Coconut Milk 1 cup
Coconut Flour 1/2 cup
Applesauce 1/2 cup all natural
Agave/Honey/Maple 1/4 cup
Coconut Oil 1/4 cup melted
Eggs 2 large 
Vanilla 1 teaspoon 
Cinnamon 1 teaspoon
Baking powder 1/2 teaspoon 
Sea Salt 1/4 teaspoon 

Whisk all ingredients together until smooth batter forms.  Pour into 10 inch round baking pan lined with more Coconut Oil.

Ingredients Crumble Topping:
Pecans 1/2 cup
Meejool Dates 1/4 cup
Cinnamon 1 tablespoon 
Agave/Honey/Maple 1 tablespoon 
Coconut Oil 1 tablespoon 
Sea Salt just a pinch

Pulse all ingredients in food processor until desired consistency is achieved.  Spirinkle Crumble over top of cake batter.

Bake at 350 degrees for 20-25 minutes until golden brown.  Allow cake to fully cool.

Ingredients Icing:
Agave/Honey/Maple 1/4 cup 
Coconut Oil 3 tablespoons (*do not melt)
Vanilla 1/2 teaspoon

Using the back of a spoon mix all Icing ingredients until no lumps and silky smooth (Zohan!).  Spread over the top of the cake.

Paleo Cookie Dough with Gluten Free Pretzels

Stay Strong and Stay Fit thru the Holidays by making your Favorite recipes healthier!

Ingredients Paleo Cookie Dough:
Almond Butter 1 cup (or any Nut butter)
Vanilla Protein Powder 1/4 cup
Agave/Honey/Maple
Enjoy Life Chips 1/4 cup
Coconut Oil 2 tablespoons 
Vanilla 1 teaspoon
Sea Salt 1/4 teaspoon 

Glutino Mini Pretzels
Enjoy Life Chips for melting & dipping
M&Ms Candies for decorating 

Mix all Cookie Dough ingredients until smooth.  Stuff in between two mini pretzels then dip in melted chocolate and sprinkle on candies.  Frigggin Delish people!

Paleo Chocolate Pecan Protein Balls

Raw, Vegan, and Paleo!  You can really use so many different options when making protein balls.  Of course those Chocolate Sweet Cravings will hit you when you least expect it (just like slamming your shin into the box = BAM!).

Ingredients:
Pecans 1/2 cup chopped
Medjool Dates 1/2 cup soaked
Cocoa Powder 1/2 cup
Chocolate Protein Powder 1/2 cup
Raisins 1/4 cup soaked      
Vanilla 1 teaspoon 
(More chopped Pecans to roll balls in)


Pulse Dates and Raisins until sticky paste forms (*soak them in water overnight or bing in microwave 1 minute with water until soft) add remaining ingredients and pulse again until incorporated.  Roll into ball then roll into chopped Pecans.  Store in refrigerator or your mouth!!

Paleo Chocolate Pecan Banana Protein Cake

Tired of the same ole banana cake?  Me too.  So using my basic recipe, I just added some ingredients to create this decadent Paleo Dessert!

Ingredients Cake:
Almond Flour 2 cups
Chocolate Protein Powder 1/2 cup
Cocoa Powder 1/2 cup
Pecans 1/2 cup chopped
Coconut Milk 1/2 cup
Agave/Honey/Maple 1/4 cup
Applesauce 1/4 cup
Water 1/4 cup
Coconut Oil 1/4 cup melted
Bananas 2 large ripe
Eggs 2 large
Vanilla 1 teaspoon
Baking Powder 1 teaspoon
Sea Salt 1/2 teaspoon 

Pulse all ingredients in a food processor until smooth batter forms.  Pour into pan greased with more coconut oil and bake at 350 degrees for 20-25 minutes.  I used a bundt pan but if using a loaf pan you may need to increase baking time slightly.

Ingredients Nut Butter Frosting:
Nut Butter 1 cup (used half Sunbutter and half Almond butter)
Coconut Oil 1/2 cup organic
Agave/Honey/Maple 1/2 cup
Vanilla 1 tablespoon 
Sea Salt 1/4 teaspoon (or this would be a great time to use the ever useful Vanilla Expresso Sea Salt from my previous blog post)
More Pecans for on top!

Pulse all ingredients in processor until light and fluffy.  Spread on completely cooked cake then top with more Pecans.

Paleo Pork & Applewood Smoked Bacon Loaded Sweet Potato Fries

How do you redeem yourself after a shitty day with a leftover pork chop?  Loaded fries baby!!!

Ingredients:
Alexia Sweet Potato Waffle Fries 1 bag
Applewood Smoked Bacon 1/2 cup cooked & chopped
Pork Chop 1 large cooked chopped
Cheese 1/2 cup shredded (Cashew or Almond cheese if strict Paleo)
Chives 1 tablespoon 
Sirracha Sauce as desired

Bake Waffle Fries as directed then add cheese, chopped bacon and pork chop and continue baking until cheese is melted but fries are nice and crispy. Serve with chives and Sirracha.  If you really want to be naughty you can add sour cream!!!

Paleo Protein Crepe

Such a quick way to make a Special Treat!  These are good for anytime. Adapted from the Beautiful and Talented @maripovoasinacio recipe.  

Ingredients:
Egg 1 large 
Vanilla ProteinPowder 1 tablespoon
Almond Milk 1 tablespoon
Pumpkin Pie Spice 1/2 teaspoon 

Coconut Oil 1 teaspoon for cooking

Whisk and cook in small nonstick pan greased with the Coconut Oil.  It only takes about 30-45 seconds to cook on each side.  Crepes can be filled with endless goodies such as Nut Butter, Gaucamole, Whipped Cream, Fruit....

Paleo Dry Rubbed Chicken

Mad Props to The Dingman's again for teaching us so many Paleo ways!  Got a Instant Pot Pressure Cooker and started to Rock Our World.  Although this recipe has also been made by baking in the oven.

Ingredients:
Boneless Chicken Thighs 4-5 lbs
Dried Garlic 2 tablespoons
Dried Parsley 2 tablespoons
Dried Thyme 2 tablespoons
Coconut Palm Sugar 2 tablespoons
Dried Mustard 1 teaspoon
Ground Ginger 1 teaspoon
Ground Curry 1 teaspoon 
Sea Salt/Pepper 1 teaspoon each 
Chicken Broth 1 cup

Toss all Spices and rub all over the Chicken.  Layer the Chicken in the Pressure Cooker and add the Broth.  Cook accordingly (we did ours for 31 minutes as it was 5 lbs).  If baking in the oven use 375 degrees for 30-35 minutes.  So Juicy!

Paleo Loaded Alexia Sweet Potato Fries with Applegate Sausage

This is just me being a pig as usual.  Yes, I know, I know there's cheese on it but it's a cheat meal.

Ingredients layer:
Alexia Sweet Potato Fries baked
Paleo Chili (prior post for recipe)
Applegate Chicken Sausage cooked
Cheddar 
Sirracha Sauce or Salsa

Then all baked in oven on parchment paper.  Next time there will be even more toppings!!



Paleo Winter Squash

So simple!  This can be done with any squash (Butternut, Acorn, Ect).

Ingredients:
Squash 2 cups cubed
Coconut Oil 2 tablespoons melted
Pumpkin Pie Spice 1 teaspoon

Toss and bake at 375 degrees 20-25 minutes until golden browned.

Paleo Chocolate Protein Nut Cup Cake

The beautiful Brianna was lucky it was her birthday or I never would've made this complicated cake.  But I tell you what it's worth every bite!!!

There's a great debate in our house Sunbutter butter versus Almond butter.  I like both but Joe says he doesn't like Sunbutter (Little does he know I put it in everything!).  This recipe was a compromise and I use both.

Ingredients Nut Cups:

Chocolate Layer:
Enjoy Life Chips 1 & 1/2 cups
Agave/Honey/Maple 1/2 cup
Coconut Oil 1/4 cup

Melt all ingredients together slowly until smooth.  Drop about a teaspoon on bottom of lined mini cup tin.  Place in freezer until it hardens.  Reserve the remaining half for the top layer.

Ingredients Nut Layer:
Nut Butter 1 cup (used half Sunbutter and half Almond butter)
Agave/Honey/Maple 1/2 cup
Vanilla Protein Powder 1/4 cup
Coconut Oil 2 teaspoons organic
Sea Salt 1/2 teaspoon (or some of that Bad Ass Expresso Vanilla Sea Salt)

Mix all ingredients together until smooth.  Add about a teaspoon on top of the chocolate layer.  Place back in freezer until hardens.  Then add final teaspoon of chocolate in place back in freezer.

Ingredients Chocolate Protein Cake:
Almond Flour 1 cup
Sweet Potato 1 cup
Almond Milk 1 cup
Cocoa Powder 1/2 cup
Chocolate Protein Powder 1/4 cup
Coconut Flour 1/4 cup
Coconut Oil 1/4 cup organic melted
Eggs 2 large
Vanilla 1 tablespoon 
Baking Powder 1 teaspoon 
Sea Salt 1/2 teaspoon 

Close all ingredients in food processor until smooth batter forms.  Pour into 9 inch round pans lined with waxed paper. Bake at 325° for 20 to 25 minutes.

Ingredients Nut Butter Frosting:
Nut Butter 1 cup (used half Sunbutter and half Almond butter)
Coconut Oil 1/2 cup organic
Agave/Honey/Maple 1/2 cup
Vanilla 1 tablespoon 
Sea Salt 1/2 teaspoon (or some of that Bad Ass Expresso Vanilla Sea Salt)

Using a standing or hand held mixer whip sll Frosting ingredients until light and fluffy.  This will take about 10 minutes be patent.  Frost cooled cake.  Top with chopped Nut Cups and drizzle with more Nut Butter and Enjoy Life Mini Chocolate Chips.  Serve at room temperature but store in refrigerator.

Paleo Zebra Cake with Chocolate Ganache

This just may be one of those times where I stumbled upon genius again!  

Ingredients Chocolate Cake:
Almond Flour 1 cup
Agave/Honey/Maple 1/2 cup
Ground Flax 1/4 cup
Cocoa Powder 1/4 cup
Eggs 2 large
Vanilla 1 teaspoon
Baking Powder 1/2 teaspoon
Sea Salt 1/4 teaspoon

Mix all wet ingredients then add dry ingredients.  Pour half of the batter into standard loaf pan lined with parchment paper.

Ingredients Vannilla Cake:
Almond Flour 1/2 cup
Agave/Honey/Maple 1/2 cup
Ground Flax 1/4 cup
Egg 1 large 
Enjoy Life Mini Chips 2 tablespoons
Vanilla 1 teaspoon 
Baking Powder 1/2 teaspoon 
Sea Salt 1/4 teaspoon 

Mix all wet ingredients then add dry ingredients.  Pour all of the batter on top of the chocholate layer.  Add the remaining chocolate on top of the vanilla. Bake at 325 degrees for 20-25 minutes.

Ingredients Chocolate Ganache:
Coconut Oil 1/2 cup
Enjoy Life Chocolate Chips 1/2 cup
Agave/Honey/Maple 1/4 cup

Melt all ingredients together until smooth and silky.  Allow to cool to room temperature before pouring over top of cooled cake.  Add nuts if desired.

Paleo Raw Chocolate Caramel Walnut Protein Bars

I'm Holy Shit, these were SO Good!  Looks labor intensive but it goes quickly.  

Ingredients Bottom Crust:
Walnuts 1 cup
Almonds 1/4 cup
Dates 1/4 cup soaked
Sea Salt 1/2 teaspoon (check out prior Blog Post for Paleo Expresso Vanilla Sea Salt.  Used in this recipe to kick things up a notch!)

Pulse all Crust ingredients in food processor until chunky paste forms.  Press in the bottom of 13x9 inch pan lined with wax paper.

Ingredients Creamy Caramel Filling:
Almond Butter 1 cup
Sunflower Butter 1 cup
Vanilla Protein Powder 1/2 cup
Almond Flour 1/4 cup
Agave/Honey/Maple 1/2 cup
Vanilla 1 tablespoon 
 
Mix all ingredients until smooth, yet thick and creamy.  Spread on top of crust layer.  Then put in Refrgerator while you go to last step.

Ingredients Chocolate Ganache:
Enjoy Life Chocolate Chips 1 1/2 cups
(Or Chocolate Bar 72% or more high quality Cacao)
Coconut Oil 2 tablespoons 
Agave/Honey/Maple 1 teaspoon 

Melt all ingredients slowly in incriminates until all smooth.  Quickly pour on top of Caramel layer and put back in Refrgerator until firms.  

*Sprinkle with more of the Expresso Vanilla Sea Salt AKA Paleo Sprinkles just before it's firm.  

Oh Baby, the Mouth Feel on this Bar is like no other!

Paleo Chili Guacamole Burger

Sometimes you just gotta eat like a Primal Beast!  I've been SO Hang-Gry lately.  So, this was perfect to hold my food cravings over.

Ingredients:
Grassfed Burger cooked
Paleo Chili 1/4 cup
Guacamole 1 tablespoon 
Sirracha sauce

Paleo Chocolate Protein Chia with Flax

Did a change from the Nut Butter to Ground Flax.  Gave it that great sticky consistency!  


Ingredients Chocolate Pudding:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Ground Flax 1 tablespoon 
Vanilla 1 teaspoon       

Then add Berries & Nuts

Mix all ingredients then let sit in refrigerator until thickens (doesn't take long). Or you can blend or even make in a jar and shake it!

Paleo Dirt Dessert

You can make anything Paleo!

Ingredients Chocolate Cake:
Cocoa Powder 1 cup
Coconut Flour 1 cup
Baking Soda 1 teaspoon
Eggs 6 large
Coconut Milk 1 1/2 cups
Coconut Oil 1/2 cup
Agave/Honey 1 1/2 cups
Vanilla 2 tablespoons
Sea Salt 1/2 teaspoon

Mix all dry ingredients in bowl then set aside. Next whip eggs in standing mixer or with mixer until stiff peaks form (yeah baby!). Slowly add the remaining wet ingredients and continue to whip until light and fluffy peaks form again. Add the dry ingredients in 1/4 cup incriminates. Mix until batter completely blended with no lumps. Let sit 5 minutes and mix again one more time after coconut flour has chance to expand. Bake for 30-35 minutes in 350 degrees preferably in two 9 inch parchment lined pans. Allow to cool 10 minutes then invert and remove parchment paper. Allow to fully cool.

Layer with Nuts and Whipped Coconut Cream (see my prior Blog Posts for recipe).

Paleo Cranberry Vanilla Chia Pudding

It's SO easy to be Good!  Stay Focused on your Health and Meal Planning.  Chia Pudding is a great option for Breakfast, Snack, or Lunch.  The Possibilities are Endless!!!

Ingredients:
Coconut/Almond Milk 1 cup
Chia Seeds 1/4 cup organic
Cranberries 1/4 cup organic/unsweet
Protein Powder 1 tablespoon 
Ground Flax 1 tablespoon
Agave/Honey/Maple 1 teaspoon 
Almonds 2 tablespoons sliced

Put ingredients in a mason jar or well sealed container and shake vigorously until all ingredients are mixed.  It will thicken the longer it sits.  Store in Refrgerator for up to a week.

Paleo Expresso Vanilla Sea Salt AKA Paleo Sprinkles

That's right you heard me correctly. This is flavored sea salt that will rock your world!  Three simple ingredients to make this flavored sea salt and then you can use it in so many ways. Rim the glass of the Paleo approved drink, sprinkle on candy or cookies, or use in your favorite recipes believe me you'll find 1 million reasons to use it!

Ingredients:
Coarse sea salt 1 cup
Brewed espresso one shot
Vanilla 1 teaspoon 

Mix all ingredients together then spread out on a lined cookie sheet And bake at 300° for 15 minutes until dries out.  Leave out until completely cool; overnight if you can until nice and dry.  If he gets clumpy you can run through the food processor to break it up. Now let the fun begin look forward to my future posts on how I'm using this good stuff!!

Paleo Pumpkin Pie Carrot Cake Granola

Yes that's right I turned some of my favorite autumn desserts into a Paleo granola!

Ingredients:
Almonds 1 cup
Pecans 1 cup
Carrots 1 cup grated
Pepito's/Pumpkin seeds 1/2 cup
Medool dates 1/2 cup organic soaked
Golden raisins 1/2 cup
Sesame seeds 1/4 cup
Coconut oil 2 tablespoons
Agave/Maple/Honey 2 tablespoons
Vanilla 1 tablespoon
Pumpkin pie spice 1 tablespoon
See salt 1 teaspoon
Cinnamon 1/2 teaspoon

In a food processor process the dates in the reasons until he thick paste forms remove from food processor. Then pulls all nuts until desired chunkiness is achieved. Add all remaining ingredients and pulse A bit more until incorporated evenly. Bake on a parchment lined cookie sheet at 300° for 15-20 minutes until golden brown.

Paleo Bacon Beef with Butternut & Acorn Squash

Perfect Combination!  I waited all year to use the seasonal vegetables.  But sweet dumpling acorn squash finally is here!

Ingredients:
Beef Roast 3-5 lbs
Butternut Squash 2 cups cubed
Sweet Dumpling Acorn Squash 2 cups cubed
Applewood Smoked Bacon 8 slices cubed
Carrots 1 cup sliced
Onion 1 large cubed
Green Pepper 1 medium cubed
Coconut Milk 1 cup full fat/organic
Beef Broth 1 cup all natural/organic
Garlic 1 clove minced
Thyme 1 teaspoon 
Sea Salt/Pepper 1 teaspoon each

Place all ingredients layered inside a crockpot or slow cooker cook on low for 4 to 6 hours until meat is tender.

Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic

Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Nut Butter 1 tablespoon 
Vanilla 1 teaspoon       
Sea Salt just a pinch 
Then add Berries & Nuts

Paleo Blueberry Lemon Cake

Pulled a good recipe outta my ass again simply by using ingredients that I had on hand.  Myer Lemons are by far the Superior Lemons!  You should try them if you haven't done so yet.

Ingredients:
Almond Flour 1 & 1/2 cups
Blueberries 1 cup fresh organic 
Coconut Flour 1/2 cup
Coconut Oil 1/2 cup organic
Agave/Honey/Maple 1/2 cup
Eggs 3 large
Coconut Milk 1/2 cup
Myer Lemon 1 medium fresh squeezed
Myer Lemon Zest 1 teaspoon 
Baking Powder 1 teaspoon 
Vanilla 1 tablespoon
Sea Salt 1/4 teaspoon 

Mix the wet ingredients together then add the dry and fold in the blueberries.  Pour batter into a greased loaf pan and bake at 350 degrees for 20-25 minutes until light golden brown.

Paleo Vanilla Rasberry Chia Pudding Parfait

Layering different Paleo Chia Pudding flavors then adding a variety of toppings has become my latest obsession!  Here I used Vanilla Chia Pudding, leftover Paleo Cake, Almonds, and topped with a spoon of Chocolate Chia Pudding and Raspberries.  


Ingredients Chocolate Pudding:
Almond/Coconut Milk 1 cup
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Ingredients Vanilla Pudding:
Almond/Coconut Milk 1 cup
Chia Seeds 1/4 cup organic
Vanilla Protein Powder 3 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Layer, Top, then Nourish your Happy Belly!

Paleo Sausage and Chicken Gumbo

Ya'll have to try this recipe; it was so good we were licking the bowl clean!

Ingredients:
Spicy Andouille Sausage 3 lbs sliced
Chicken 2 lbs cooked/sliced
Butternut Squash 2 cups cubed
Broth 2 cups all natural
Bell Peppers 2 cups cubed 
Sweet Onion 1 cup cubed
Celery 1 cup cubed
Carrots 1 cup cubed
Coconut Milk 1/2 cup full fat organic
Garlic 1 clove minced
Smoked Paprika 2 tablespoons 
Cayenne Pepper 1 teaspoon 
Sea Salt/Pepper 1 teaspoon each
Coconut Oil 1 tablespoon 

As always, this recipe makes a big ole batch.  Grease a slow cooker/crock pot with the Coconut Oil then place all ingredients inside and stir.  Cook on low for 4-6 hours until tender.  Believe me, you will not even miss the rice.

Coconut Whipped Cream
(Can substitute Greek or Coconut Yogurt)
Sliced Almonds
Freeze Dried Organic Berries
Leftover Paleo Chocolate chopped

I make several at a time so there is a Grab & Go option!

Paleo Beef and Root Vegetable Stew

Although I live in Sunny Florida, you just can't beat the satisfaction of a Hearty Stew.  Plus it's a One Pot Wonder so what's not to Love!

Ingredients:
Stew Beef 3-5 lbs
Carrots 1 cup cubed
Parsnips 1 cup cubed
Sweet Potato 1 cup cubed
Celery 1 cup sliced
Sweet Onion 1 large sliced 
Crushed Tomatoes 1 cup
Coconut Milk 1 cup full fat/organic
Sweet Pepper 1/2 cup sliced any color
Garlic 2 cloves minced
Tomato Paste 1 tablespoon 
Smoked Paprika 1 tablespoon 
Sea Salt/Pepper 1 teaspoon each

Literally just plop and drop all ingredients into a slow cooker or stovetop pot and stir.  Cook on low for 4-6 hours until all ingredients are tender.

Paleo Raw Key Lime Pie

Quite the contender this Pie was!  Although Fair Warning; it's labor intensive but worth it!

Ingredients Crust:
Walnuts 1 cup
Almonds 1 cup
Dates 1/2 cup soaked 
Golden Raisins 1/4 cup soaked
Vanilla 1 teaspoon 
Pink Himalayan Salt 1/2 teaspoon 

Soak the Dates and Golden Raisins overnight in water or pop in the microwave with water until soft; then drain.  Grind the Walnuts and Almonds in a food processor until medium even chunks.  Remove Nuts then pulse Dates and Raisins until a smooth paste forms.  Add all other ingredients and pulse until a sticky paste forms (will be chunky).  Evenly press Crust into the bottom of a 10 inch Cheesecake pan.  

Ingredients Pie Filling:
Key Limes 1 cup freshly squeezed juice
Coconut Mik 1 can full fat/organic
Kiwi 1 cup cubed green flesh only
Coconut Oil 1/2 cup
Agave/Honey/Maple 1/2 cup
Coconut Manna Cream 1/4 cup 
Arrowroot Powder 1/4 cup 
Paleo Green Food Coloring 2 tablespoons heated (used steeped concentrated Green Matcha Tea)

Dissolve the Arrowroot Powder in the heated Green Food coloring.  Then simply blend all the filling ingredients until smooth an creamy.  Pour the filling mixture over the crust and place back into the refrigerator to firm up.

Ingredients Whipped Cream:
*Coconut Milk Cream 2 cups (must be full fat/organic cold)
Agave/Honey/Maple 2 tablespoons
Vanilla 1 teaspoon 
Sliced Almonds to decorate

*Put canned organic Coconut Milk in the refrigerator several hours or overnite (about 3-4 cans).  Spoon out the harden solid Cream and whip that with the remaining ingredients until light and fluffy. Spread over the top of the pie, decorate with Sliced Almonds, and Whaa-Laaa!!!

Paleo Curry Chicken With Sweet Potatoes

Can't beat the Plop and Drop Method!  The Crock Pot/Slow Cooker is a Paleo Person's Best Friend.

Ingredients:
Chicken Thighs 4-5 lbs Boneless cubed
Sweet Potatoes 2 cups cubed
Red Pepper 1 cup cubed
Sweet Onion 1 cup cubed
Coconut Milk 1/2 cup organic
Chicken Broth 1/2 cup organic all natural
Celery 1/2 cup cubed
Garlic 2 cloves minced
Curry Powder 2 tablespoons
Ground Chipotle 1 teaspoon 
Sea Salt/Pepper 1 teaspoon each
 
Seriously do I even need to give instructions.  Put the Veggies in the bottom of a Crock Pot/Slow Cooker.  Then add the Chicken and remaining ingredients.  Cook for 4-6 hours until tender.

Paleo Pesto Zoodles and Pork Chop

Zoodles are by far my new obsession!  Healthy and delicious.  I'll keep this Short and Sweet for those of you who actually read My Blog (thank you, I know who you are)!

Ingredients Pesto:
Basil 1 cup packed fresh leaves
Olive Oil 1/2 cup
Pine Nuts 1/2 cup
Lemon Zest 1 tablespoon 
Garlic 2 small cloves 
Sea Salt/Pepper 1 teaspoon each
(Omitted cheese to be strict Paleo but if you do use it try Pecorino or Romano).  

Blend all ingredients together until bright green thick paste forms.

Ingredients Pork Chops:
Pork Chops 4 medium
Paleo Pesto Sauce

Rub Pork Chops with a teaspoon each of the Paleo Pesto Sauce; then grill.

Ingredients Zoodles:
Zucchini 4 large
Yellow Squash 4 large
Paleo Pesto Sauce 1/2 cup
Coconut Oil 1 tablespoon

Using a Spiralizer turn the Zucchini and Yellow Squash into long thin strains of noodles.  Heat Coconut Oil in large Wok or Pan.  Add the Zoodles and Pesto and cook in high heat for less than 4-5 minutes (Zoodle Noodles should be Al'Dente just like Regular Pasta).  Serve with Pork Chops (and I like Sirracha!).

Paleo Sunbutter Chocolate Protein Parfait

Brianna told Eleia that Sunbutter was made by Fairies from Sunflowers!  All I know is it tastes like a Natural Wonder.

Ingredients Chocolate Pudding:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Nut Butter 1 tablespoon 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Ingredients Sunbutter Pudding:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Vanilla Protein Powder 3 tablespoons  
Sun Butter 3 tablespoons
Agave/Honey/Maple 1 tablespoons 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Ingredients Add Ins:
Enjoy Life Chocolate Chips 
Sliced Almonds 

Layer flavors and enjoy for Breakfast, Dessert, Fuel Before or even Post WOD,or whenever the hell you want to!  I made 4 healthy portions out of this recipe but then again, I'm a Paleo Pig!

Paleo Acorn Lasagna

My Italian Roots are merging with My Paleo Lifestyle!!  The Result?  Pure Bliss!!!

Ingredients Meat Sauce:
Ground Beef 3 lbs grassfed
Sausage 2 lbs organic/all natural
Tomatoes 2 cups organic/all natural 
Onion 1 large minced
Peppers 1 cup minced any color
Olive Oil 2 tablespoons
Tomato Paste 2 tablespoons pure
Basil 5-6 leaves chopped 
Garlic 3 cloves minced
Sea Salt/Pepper 1 teaspoon each

Ingredients Lasagna:
Meat Sauce 5-6 cups
Acorn Squash 4 peeled sliced thin
Sweet Potato 2 large sliced thin
Provolone 8-10 Slices 


Heat Olive Oil on medium in large sauce pot. Sauté Garlic, Peppers, and Onions until translucent.  Add the Ground Beef and Sausage removed from casing and cook until lightly browned.  Drain off grease then add all remaining ingredients and cook for an additional 15-20 minutes until the Meat Sauce is Happy!  Layer Sweet Potato slices in baking pan greased with Paleo approve Oil (used 13x9 inch pan).  Add layer of Meat Sauce and then some Provolone slices.  Next layer the Acorn Squash slices (it's okay to overlap and make sure fully covered).  Then repeat the Meat Sauce and Provolone slices.  Bake covered in foil at 325 degrees for 35-40 minutes until bubbly goodness forms.  Then uncover and cook an additional 5-10 minutes so cheese can brown.  Allow to cool about 15 minutes before cutting or it will fall apart in you.  Sofa King Good!!! 



Paleo Bacon Red Pepper Chicken

Ingredients:
Chicken Tenders 16 
Red Peppers 4 : sliced into 4s (large)
Bacon 16 slices  
Jalepenos 3 sliced thinly
Sea Salt/Pepper to taste 

Layer start with the Red Prpper slices, then Chicken Tenders, Jalepenos.  Season with Sea Salt/Pepper then wrap with a slice if Bacon.  These can be grilled but it was too damn hot in Sunny Florida so I baked them at 350 degrees for about 35-40 minutes (be sure to drain out the fat periodically).  I squirted Lime on at the end and put Sirracha Sauce on before serving.  Holy shit Nick is a Paleo Master!!!

Paleo Chocolate Cake

Paleo Chocolate Cake

Yes, you can have your cake and eat it too!!!

Ingredients:

Cocoa Powder 1 cup
Coconut Flour 1 cup
Baking Soda 1 teaspoon
Eggs 6 large
Coconut Milk 1 1/2 cups
Coconut Oil 1/2 cup
Agave/Honey 1 1/2 cups
Vanilla 2 tablespoons
Sea Salt 1/2 teaspoon

Mix all dry ingredients in bowl then set aside. Next whip eggs in standing mixer or with mixer until stiff peaks form (yeah baby!). Slowly add the remaining wet ingredients and continue to whip until light and fluffy peaks form again. Add the dry ingredients in 1/4 cup incriminates. Mix until batter completely blended with no lumps. Let sit 5 minutes and mix again one more time after coconut flour has chance to expand. Bake for 30-35 minutes in 350 degrees preferably in two 9 inch parchment lined pans. Allow to cool 10 minutes then invert and remove parchment paper. Allow to fully cool before frosting.

So Many Options for Frosting & Fillings!!
Be creative with allowed Paleo ingredients.

Chocolate Frosting:
Enjoy Life Chocolate Chips 2 cups
Coconut Oil 1 cup
Vanilla 2 tablespoons

Melt chocolate chips slowly in double boiler or microwave incriminates of 30 seconds while stirring. Melt Coconut Oil and add with Vanilla to Chocolate. Transfer to standing or hand held mixer. Continue to beat until mixture is whipped into fluffy bliss!

Or
Chocolate Frosting:
Almond Butter 1 1/2 cups
Cocoa Powder 1/2 cup
Agave/Honey 1/2 cup

Melt Almond Butter and Agave/Honey. then add Cocoa Powder. Simply mix until creamy.

All and all time consuming but on level of difficulty it's not bad at all!

Paleo Figgy Chocolate Chia Protein Parfait

Friggin love me some Figs!  If your not a fan, try the fresh ones that are in season now.  

Ingredients Chocolate Chia Protein Pudding:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Nut Butter 1 tablespoon 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Fresh Figs 1/2 cup sliced
Nuts 1/4 cup

Mix all ingredients together in a medium bowl; let stand in refrigerator for half an hour and blend again until smooth and creamy.  Pudding will continue to thicken.
Top with Nuts and Fresh Figs.  I pour into Grab and Go jars!

Paleo Chocolate & Vanilla Cake

Paleo Cake is a Labor of Love!  Once you are done with all of the work you are amazed with how happy you feel.  Cake makes everything better!!

Ingredients Chocolate Cake:
Cocoa Powder 1 cup
Coconut Flour 3/4 cup
Eggs 4 large
Coconut Milk 1 cup
Coconut Oil 1/2 cup
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Ingredients Vanilla Cake:
Almond Flour 2 cups
Coconut Milk 1 cup
Eggs 4 large
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Bake both cakes at 325 degrees for 20-25 minutes.  Allow cakes to fully cool before frosting.

Ingredients Chocolate Frosting:
Enjoy Life Mini Chocolate Chips 3 cups
Coconut Oil 1 & 1/2 cups
Vanilla 2 tablespoons 

Melt all ingredients on stove top in pan slowly or in microwave in 30 second increments.  Whisk vigorously.  Allow the mixture to completely cool and form a solid.  Then using a hand or standing mixture beat the solid into a fluffy and creamy frosting (this takes time).  Once desired consistency is achieved; you are ready to frost and decorate the cake.  The cake melts quickly (I store in the refrigerator then take out an hour or so to allow to room temperature before serving).  Decorate with Paleo approved embelishments!

Paleo Nutella Cappuccino

Ooooh Laa Laa!  This is because I was having a crappy day.  Sure did pep me up.

Ingredients:
Expresso 2 shots brewed
Stevia 1 packet
Almond/Coconut Milk 1/2 cup frothed 
Nutella 1 teaspoon melted

Brew Expresso then sweeten.  Add the Frothy Milk and then drizzle with Nutella.  There's something so comforting about each sip; and the way the Chocolate melts into the Coffee and makes a party in my mouth.  Now I'm happy!!

Paleo Berries and Cream with Nuts

Let's get crackin!  Start off your day with Energy and Fuel that it needs to Perform.

Ingredients:
Berries 1 cup fresh
Nuts 1/4 cup
Dried Fruit 1 tablespoon (Used Cranberries & Dates chopped)
Coconut Cream 2 tablespoons (whip Coconut Cream solids with Vanilla and Agave/Honey/Maple to make Paleo whipped Cream)

Layer and enjoy for Breakfast or Snack and your body will thank you for the Power Boost!

Paleo Beef Butternut Lasagna

Wowza!  Sometimes I even amaze myself with certain recipes.  Folks you are gonna love this one; kept it as simple as possible.  Okay full disclosure I cheated with Provolone cheese but you can substitute Almond/Cashew/Other Paleo Cheese instead.  And try to get the oblong shaped Butternut not the peanut shape as it'll cut better.  

Ingredients:
Butternut Squash 3 cups peeled/sliced in very thin circles
Ground Beef 3 lbs grassfed
Tomatoes 2 cup crushed 
Pepper 1 cup diced any color
Onion 1 medium diced
Garlic 2 cloves diced 
Tomato Paste 2 tablespoons 
Olive Oil 1 tablespoon 
Basil 1 tablespoon dried
Parsley 1 tablespoon 
Sea Salt/Pepper
Smoked Provolone 16 slices

Brown the Ground Beef in a skillet.  Then add the Peppers, Onion, Garlic and continue to cook until Vegtables are translucent.  Add the Tomatoes, Paste, and Spices.  Cook for about 5 more minutes until all the flavors marry.  Set Beef Mixure aside.  Grease a 13x9 inch baking dish with Olive Oil.  Line the bottom with the Butternut Squash circles.  Next layer the Beef and then the Provolone Cheese and repeat all three layers once more.  Bake covered with foil for 35-40 minutes until bubbly golden delicious magic happens!



Paleo Greek Parfait with Berries

Meal and Snack prep is normal if you are trying to stay healthy and fit.  Do two to four at at time to Max out your efforts.  Just like a WOD!

Ingredients:
Berries 2 cups 
Greek/Coconut Yogurt 1 cup
Almonds 1/2 cup sliced
Flax 1/4 cup ground organic
Coconut Flakes 1/4 cup unsweetened 

Layer everything in a mason jar or container and store in refrigerator up to a week depending on freshness of the Berries.
