Paleo Raw Chocolate Pecan Protein Bites

Another simple yet yummy way to have a special Paleo treat!

Almond Butter 1 cup (any Nut Butter)
Cocoa Powder 1/4 cup
Agave/Honey/Maple 1/4 cup
Pecans 1/2 cup whole pieces
Vanilla 1 teaspoon

Melt Nut Butter with Agave/Honey/Maple stir until smooth.  Add Cocoa Powder and Vanilla.  Work quickly to roll into balls.  Press a whole Pecan on top and refrigerate until firm.  Enjoy!!!

Paleo Broiled Grapefruit

First and foremost; you have to like Grapefruit to begin with in order to appreciate this recipe.  Enough said.

Grapefruit 2 halved
Balsamic Vinager 2 teaspoons 

Drizzle top of Grapefruit halves with Balsalmic Vinager then broil until golden crispy brown.  This happens fast folks so do not leave them unattended.  Allow to cool and enjoy for breakfast, lunch, or a paleo snack!

Paleo Blueberry Coconut Almond Bake

It's exactly that folks; just those few simple ingredients baked in the oven = perfection!

Blue Berries 2 cups fresh
Sliced Almonds 1/2 cup
Coconut Flaskes 1/4 cup

Layer ingredients in order in baking dish and bake at 350 degrees for 15-20 minutes until bubbly.  Allow to cool before scarfing it all down.  This can be done with any Berry as a substitute.

Paleo Chocolate Nut Protein Cup Cakes

These are some seXXXy Cup Cakes!  So decadent and rich.   We used for Breakfast, Snack, and Dessert.

Almond Flour 1 cup
Ground Flax 1 cup
Chocolate Protein Powder 1/2 cup 
Cocoa Powder 1/2 cup
Coconut Milk 1/2 cup
Agave/Honey/Maple 1/2 cup
Eggs 3 large
Coconut Oil 1/4 cup melted
Almond Butter 1/4 cup melted
Nuts 1/4 cup chopped
Enjoy Life Mini Chips 1/4 cup (Chocolate Chips)
Vanilla 1 tablespoon
Baking Powder 1 teaspoon 
Sea Salt 1/2 teaspoon 
Mix all ingredients except the Enjoy Life Chips and Nuts (reserve for top).  Spoon batter into 12 lined Cup Cake/Muffin tins.  Top with Chips & Nuts.  Bake at 325 degrees for 17-20 minutes until light golden.

Paleo Berry Granola Parfait

That's right folks, it's Paleo!

Ingredients Granola:
Almonds 1 cup 
Cashews 1/2 cup
Pecans 1/2 cup
Pepita/Pumpkin Seeds 1/2 cup
Dates 1/4 cup soaked 
Figs/Raisins 1/4 cup 
Cinnamon 1 tablespoon 
Vanilla 1 tablespoon 
Sea Salt 1/2 teaspoon 

Pulse Nuts in food processor until coarsely chopped.  Then pulse Dates with Figs/Raisins until paste forms. Mix all ingredients then spread on sheet pan lined with parchment paper.  Bake at 325 degrees for 20-25 minutes until golden brown.  Allow to fully cool before using.  

Ingredients Parfait: 
1/2 cup Granola 
1/2 cup Berries
1/2 cup Greek Yogurt 

Layer and enjoy!  Hold up well in refrigerator for days if you pre-make them.

Paleo Chipotle Almond Baked Butternut Squash

Something so comforting about this dish.  I know it's a vegtable but my mind even thinks it could be a dessert.  It combines heat AND sweet!!!

Butternut Squash 1 medium
Coconut Oil 1 tablespoon melted
Almond Slices 3 tablespoons
Ground Chipotle 1 teaspoon
Cinnamon 1/2 teaspoon
Ground Ginger 1/2 teaspoon 
Sea Salt/Pepper to taste 

Cut Butternut Squash and core out seeds.  Leave in 2-3 inch peices.  Rub down Squash with Coconut Oil; then add spices.  (Reserve the Almonds Slices for the last 5 minutes of baking).  Bake at 350 degrees for 15-20 minutes until golden brown (add Almond Slices towards the end of baking).
