Paleo Berry Granola Parfait

That's right folks, it's Paleo!

Ingredients Granola:
Almonds 1 cup 
Cashews 1/2 cup
Pecans 1/2 cup
Pepita/Pumpkin Seeds 1/2 cup
Dates 1/4 cup soaked 
Figs/Raisins 1/4 cup 
Cinnamon 1 tablespoon 
Vanilla 1 tablespoon 
Sea Salt 1/2 teaspoon 

Pulse Nuts in food processor until coarsely chopped.  Then pulse Dates with Figs/Raisins until paste forms. Mix all ingredients then spread on sheet pan lined with parchment paper.  Bake at 325 degrees for 20-25 minutes until golden brown.  Allow to fully cool before using.  

Ingredients Parfait: 
1/2 cup Granola 
1/2 cup Berries
1/2 cup Greek Yogurt 

Layer and enjoy!  Hold up well in refrigerator for days if you pre-make them.
