Paleo Banana Cookie Dough Mug Cake

These Mug Cakes are really surprisingly easy and super delicious!

Ingredients: (per Mug Cake)
Vanilla Protein Powder 1 tablespoon
Banana 1/2 medium
Egg 1 medium
Stevia 1 Packet 
Baking Powder 1/4 teaspoon 
Nuts 1 tablespoon chopped
Enjoylife Chips 1 teaspoon 

Mash Banana with a fork in microwave safe mug.  Add all remaining ingredients and continue to fork it until smooth batter forms.  Cook in microwave on high for 1 and half minutes.  Allow to cool as will be very hot.  Top as you wish.

Turtle Power for James Edwards WOD

At Crossfit Empirical we come in all shapes and sizes but there's one thing we all share; that's our Love for One Another!  I kid you not, these are some of the BEST people you will ever have the privledge if meeting.  We all came together to show our support for a good cause.  We proved that you CAN pay it forward.  You CAN make a difference.  And that Random Acts of Kindness, are not always so Random.....

It is with sorrow that I tell you about little James.  On 5/30/14  2 year old James experienced a near drowning.  He is still in PICU and they are asking for Prayers and Positivity.  Please teach Children about Water Safty.

Paleo Raw Strawberry Cheesecake

Paleo, Raw, Gluten Free, Vegan, and Friggin Delicious!  Although labor intensive, once it's all said and done; you will be SO Happy!

Stay with me people......this requires foresight and preparation. 

Ingredients Crust:
Almonds 1 cup
Dried Figs 1/2 cup soaked
Medjool Dates 1/4 cup soaked
Vanilla 1 teaspoon
Sea Salt 1 teaspoon 

*Soak Figs and Dates over night to soften.  Blend all Crust ingredients in food processor until cruntchy paste forms.  Spread into the bottom and up sides a bit of a 9-10 inch Cheesecake springform pan.  Place In freezer. 

Ingredients Creamy Middle:
Cashews 2 cups soaked 
Macadamia Nuts 1 cup soaked
Coconut Milk 1 cup full fat
Coconut Oil 1 cup organic 
Agave/Honey/Maple 1 cup
Lemons 2 medium juiced 
Lemons Rind Zest 1 tablespoon grated
Vanilla 2 tablespoons 

*Soak Nuts overnight in water to soften.  Blend all Creamy Middle ingredients in food processor until smooth and creamy. This will take time; continue to scrap edges making sure all is incorporated.  Mixture will soften slightly more afterwards also.  Pour over Crust and spread evenly.  Place back in freezer. 

Last Step.....you're almost there!

Ingredients Berry Layer:
Strawberrys 3 cups sliced (any Berry)
Agave/Honey/Maple 1/4 cup
Arrowroot Powder 1 teaspoon 
Lemon Zest Rind 1 teaspoon 

Heat Berrys gently with remaining ingredients in stovetop pot on medium heat.  Let mixture bubble (carefully) and then remove from heat to allow to cool.  Once Berries have cooled then spread evenly over top of Creamy Middle.  Place bake in freezer.  

Once ready to serve, defrost in refrigerator or by taking out about an hour prior.  Keep your eye in the Cheesecake though, after all it's Paleo so it will melt rather quickly.  I made several Paleo Cheesecakes using many different topping flavor profiles.  Use the base and expiriment!   






Paleo Sausage Cabbage Pie AKA Disbrow Pie

Another genius recipe from Christina Disbrow.  With a few simple ingredients in the pie then top however you choose.  Being the Ginny Whaps we are, we chose to put Gravy/Sauce on top of ours.

Ingredients:
Sausage 6 links (Hot/Mild)
Cabbage Head 1 medium 

In a baking pie dish lined with Olive oil start layering the Cabbage, then a layer of Sausage.  Alternate layers with the Hot or Mild if using each.  Cover Pie with foil and bake at 350 degrees for about an hour until Cabbage is tender.  The Disbrows have a great sauce with Grrek Yogurt and Mustard that pairs well also.

Paleo Guacamole filled Crepes

Nutritionista @maripovoasinacio has the best ideas!   Check her out.

Ingredients Crepe: 
Coconut Flour 1 teaspoon
Egg Whites 4 large
Cinnamon 1/2 teaspoon
Pumpkin Spice 1/2 teaspoon
Stevia Packet (or any)
Baking Powder 1/4 teaspoon (aluminum free)

Ingredients Other:
Avacado 1 medium smashed
Coconut Oil 1 tablespoon (for pan frying)
Maple Syrup (to serve with)

Mix all Crepe ingredients in bowl using a fork.  Whisk until smooth.  Heat Coconut Oil in medium non-stick frying pan.  Pour Crepe batter into pan and swirl until one thin layer.  Cooks fast!  Flip and brown on both sides.  Fill with smashed Avacado then roll up; and top with Maple syrup.

Paleo BBQ Bacon Wrapped Meatloaf Cups

All I can say is.....BOOM!!  Because this was Dynomite.  We already know that Meatloaf is a delicious and simple dish but add the extra two minutes to elevate it to Extrodinary!  I promise, you will be SO glad you did.

Ingredients Meatloaf:
Ground Beef 3 lbs grassfed
Onion 1 large finely diced
Green Pepper 1 medium finely diced
Red Pepper 1 medium finely diced
Ground Flax 1/2 cup
Eggs 4 large
Garlic 1 clove minced
Coconut Amino's 2 tablespoons 
Tomato Paste 1 teaspoon
Sea Salt/Pepper 1 teaspoon each

Ingredients Other:
Bacon 12 slices 
Coconut Oil 1/4 cup
Paleo BBQ Sauce 1/2 cup (see previous Blog Posting for recipe)

Mix all Meatloaf ingredients together by hand until everything is well blended.  Do not over mix and abuse the Beef; this will make the Meat tough.  Grease the inside of 12 cupcake/muffin tin openings with the Coconut Oil.  Wrap 1 slice of Bacon around each tin.  Place about a Fist Full of Meat (those of you who think like me are giggling right now) in the middle of each tin. Hey I'm Italian, that's a real measurement where I come from!  Top with about a teaspoon of the Paleo BBQ sauce.  Bake at 350 degrees for 20-25 minutes until golden brown.

Paleo Protein Mug Cake

No flour, and No Banana.  Challenge was to make a Dessert but conforming to strict Paleo.  Protein Powder was my only leverage.

Ingredients:
Chocolate Protein Powder 1 scoop
Almond Milk 2 tablespoons
Egg 1 large
Almond Butter 1 teaspoon
Agave/Honey/Maple 1 teaspoon
Cocoa Powder 1 teaspoon 
Baking Powder 1/8 teaspoon
Toppings/Embellishments (Nuts/Enjoylife Mini Chocolate Chips or any Paleo Approved)

Mix all ingredients except your toppings in your favorite microwave safe mug; until smooth batter forms.  Microwave on high for 1 & 1/2 minutes (make sure to watch because it rises).  Allow to cool a bit or you will surely burn your tounge!  Top with your favorite Paleo treats!

Paleo Bacon Chicken Sesame Stirfry

This goes out to Christina Disbrow (AKA Sandra Bullock) for sending me the orginal recipe.  Of course I forgot a few items and the Husband doesn't like some others.  So this was the final outcome.

Ingredients:
Chicken 2 cups cooked 1 inch cubed
Stirfry Veggies 3 cups
Bacon 6 slices chopped
Green Onions 1/4 cup chopped
Coconut Amino's 2 tablespoons 
Red Thai Curry Paste 2 tablespoons 
Coconut Oil 2 tablespoons 
Sesame Seeds 2 tablespoons  
Lime Wedges for serving

Heat Bacon in Coconut Oil in large wok or frying panini medium heat.  Add Veggies and Green Onions sauté for 4-5 minutes.  Add all remaining ingredients and continue to cook an additional 5-10 minutes until tender.  Serve with a squirt of Lime (not sure why but it works; you will thank me, trust the process!).

Paleo Beef Braciole

Getting in touch with my Italian Roots!  This Stuffed Meat dish reminds me of my Grandparents and it was already Paleo.

Ingredients:
Flank Steak 2 lbs thinly sliced
Spinach 1 cup fresh leaves
Crushed Tomatoes 1 cup
Pine Nuts 1/2 cup
Raisins 1/2 cup
Olive Oil 2 tablespoons 
Sea Salt/Pepper to taste

Line baking dish with the Olive Oil and half if the Crushed Tomatoes.  Roll each peice of Steak with Raisins, then a few leaves of Spinach, then some Pine Nuts.  Use a toothpick or spear if needed to keep roll tight.  Make sure they are all evenly done so they will cook evenly.  Layer remaining Tomatoes on top and bake covered at 325 degrees for 25-30 minutes until meat is tender.

Paleo Raspberry Lime Margarita (The Jenn)

This s what Heaven tastes like.  Jenn VanBuskirk from Crossfit Empirical is the creator and genius behind this kick ass cocktail! 

Ingredients:
Tequila 4 shots (Milagro/Tito's)
Limes 4 freshly sweezed  
Raspberries 6-8 fresh 
Agave 1 tablespoon 

Serves Two; divide Rasberries in each glass then muddle with Agave (also evenly distributed..... Okay, so I'm OCD what of it?!).  Add Tequila & Lime juice then stir.  My new Addiction!

Paleo Pecan Protein Pralines

Why I do declare, these are simply Devine!  Raw, Vegan, and Paleo.  This recipe is dedicated Sweet Lil Christina Disbrow; who got me all worked up about going to Savanna and tasting the yummy candy there.  

Ingredients:
Dates 1 cup pitted/soaked
Pecans 1/2 chopped 
Chocolate Protein Powder 1/4 cup 
Cocoa Powder 1 tablespoon 
Vanilla 1 teaspoon 

Heat soaked Dates in microwave or stovetop for 2 minutes until soft.  Pulse thru food processor until smooth.  Add Remaining ingredients except Pecans.  Pulse until mixture completely uncorporated.  Work fast as it forms sticky dough.  Fold in Pecans.  Roll into 1 inch balls and refrigerate until firm.
