Paleo Raw Strawberry Cheesecake

Paleo, Raw, Gluten Free, Vegan, and Friggin Delicious!  Although labor intensive, once it's all said and done; you will be SO Happy!

Stay with me people......this requires foresight and preparation. 

Ingredients Crust:
Almonds 1 cup
Dried Figs 1/2 cup soaked
Medjool Dates 1/4 cup soaked
Vanilla 1 teaspoon
Sea Salt 1 teaspoon 

*Soak Figs and Dates over night to soften.  Blend all Crust ingredients in food processor until cruntchy paste forms.  Spread into the bottom and up sides a bit of a 9-10 inch Cheesecake springform pan.  Place In freezer. 

Ingredients Creamy Middle:
Cashews 2 cups soaked 
Macadamia Nuts 1 cup soaked
Coconut Milk 1 cup full fat
Coconut Oil 1 cup organic 
Agave/Honey/Maple 1 cup
Lemons 2 medium juiced 
Lemons Rind Zest 1 tablespoon grated
Vanilla 2 tablespoons 

*Soak Nuts overnight in water to soften.  Blend all Creamy Middle ingredients in food processor until smooth and creamy. This will take time; continue to scrap edges making sure all is incorporated.  Mixture will soften slightly more afterwards also.  Pour over Crust and spread evenly.  Place back in freezer. 

Last Step.....you're almost there!

Ingredients Berry Layer:
Strawberrys 3 cups sliced (any Berry)
Agave/Honey/Maple 1/4 cup
Arrowroot Powder 1 teaspoon 
Lemon Zest Rind 1 teaspoon 

Heat Berrys gently with remaining ingredients in stovetop pot on medium heat.  Let mixture bubble (carefully) and then remove from heat to allow to cool.  Once Berries have cooled then spread evenly over top of Creamy Middle.  Place bake in freezer.  

Once ready to serve, defrost in refrigerator or by taking out about an hour prior.  Keep your eye in the Cheesecake though, after all it's Paleo so it will melt rather quickly.  I made several Paleo Cheesecakes using many different topping flavor profiles.  Use the base and expiriment!
