Paleo Acorn Lasagna

My Italian Roots are merging with My Paleo Lifestyle!!  The Result?  Pure Bliss!!!

Ingredients Meat Sauce:
Ground Beef 3 lbs grassfed
Sausage 2 lbs organic/all natural
Tomatoes 2 cups organic/all natural 
Onion 1 large minced
Peppers 1 cup minced any color
Olive Oil 2 tablespoons
Tomato Paste 2 tablespoons pure
Basil 5-6 leaves chopped 
Garlic 3 cloves minced
Sea Salt/Pepper 1 teaspoon each

Ingredients Lasagna:
Meat Sauce 5-6 cups
Acorn Squash 4 peeled sliced thin
Sweet Potato 2 large sliced thin
Provolone 8-10 Slices 


Heat Olive Oil on medium in large sauce pot. Sauté Garlic, Peppers, and Onions until translucent.  Add the Ground Beef and Sausage removed from casing and cook until lightly browned.  Drain off grease then add all remaining ingredients and cook for an additional 15-20 minutes until the Meat Sauce is Happy!  Layer Sweet Potato slices in baking pan greased with Paleo approve Oil (used 13x9 inch pan).  Add layer of Meat Sauce and then some Provolone slices.  Next layer the Acorn Squash slices (it's okay to overlap and make sure fully covered).  Then repeat the Meat Sauce and Provolone slices.  Bake covered in foil at 325 degrees for 35-40 minutes until bubbly goodness forms.  Then uncover and cook an additional 5-10 minutes so cheese can brown.  Allow to cool about 15 minutes before cutting or it will fall apart in you.  Sofa King Good!!! 



Paleo Bacon Red Pepper Chicken

This was from his recipe.

Ingredients:
Chicken Tenders 16 
Red Peppers 4 : sliced into 4s (large)
Bacon 16 slices  
Jalepenos 3 sliced thinly
Sea Salt/Pepper to taste 

Layer start with the Red Prpper slices, then Chicken Tenders, Jalepenos.  Season with Sea Salt/Pepper then wrap with a slice if Bacon.  These can be grilled but it was too damn hot in Sunny Florida so I baked them at 350 degrees for about 35-40 minutes (be sure to drain out the fat periodically).  I squirted Lime on at the end and put Sirracha Sauce on before serving.  Holy shit Nick is a Paleo Master!!!

Paleo Chocolate Cake

Paleo Chocolate Cake

Yes, you can have your cake and eat it too!!!

Ingredients:

Cocoa Powder 1 cup
Coconut Flour 1 cup
Baking Soda 1 teaspoon
Eggs 6 large
Coconut Milk 1 1/2 cups
Coconut Oil 1/2 cup
Agave/Honey 1 1/2 cups
Vanilla 2 tablespoons
Sea Salt 1/2 teaspoon

Mix all dry ingredients in bowl then set aside. Next whip eggs in standing mixer or with mixer until stiff peaks form (yeah baby!). Slowly add the remaining wet ingredients and continue to whip until light and fluffy peaks form again. Add the dry ingredients in 1/4 cup incriminates. Mix until batter completely blended with no lumps. Let sit 5 minutes and mix again one more time after coconut flour has chance to expand. Bake for 30-35 minutes in 350 degrees preferably in two 9 inch parchment lined pans. Allow to cool 10 minutes then invert and remove parchment paper. Allow to fully cool before frosting.

So Many Options for Frosting & Fillings!!
Be creative with allowed Paleo ingredients.

Chocolate Frosting:
Enjoy Life Chocolate Chips 2 cups
Coconut Oil 1 cup
Vanilla 2 tablespoons

Melt chocolate chips slowly in double boiler or microwave incriminates of 30 seconds while stirring. Melt Coconut Oil and add with Vanilla to Chocolate. Transfer to standing or hand held mixer. Continue to beat until mixture is whipped into fluffy bliss!

Or
Chocolate Frosting:
Almond Butter 1 1/2 cups
Cocoa Powder 1/2 cup
Agave/Honey 1/2 cup

Melt Almond Butter and Agave/Honey. then add Cocoa Powder. Simply mix until creamy.

All and all time consuming but on level of difficulty it's not bad at all!

Paleo Figgy Chocolate Chia Protein Parfait

Friggin love me some Figs!  If your not a fan, try the fresh ones that are in season now.  

Ingredients Chocolate Chia Protein Pudding:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Nut Butter 1 tablespoon 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Fresh Figs 1/2 cup sliced
Nuts 1/4 cup

Mix all ingredients together in a medium bowl; let stand in refrigerator for half an hour and blend again until smooth and creamy.  Pudding will continue to thicken.
Top with Nuts and Fresh Figs.  I pour into Grab and Go jars!

Paleo Chocolate & Vanilla Cake

Paleo Cake is a Labor of Love!  Once you are done with all of the work you are amazed with how happy you feel.  Cake makes everything better!!

Ingredients Chocolate Cake:
Cocoa Powder 1 cup
Coconut Flour 3/4 cup
Eggs 4 large
Coconut Milk 1 cup
Coconut Oil 1/2 cup
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Ingredients Vanilla Cake:
Almond Flour 2 cups
Coconut Milk 1 cup
Eggs 4 large
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Bake both cakes at 325 degrees for 20-25 minutes.  Allow cakes to fully cool before frosting.

Ingredients Chocolate Frosting:
Enjoy Life Mini Chocolate Chips 3 cups
Coconut Oil 1 & 1/2 cups
Vanilla 2 tablespoons 

Melt all ingredients on stove top in pan slowly or in microwave in 30 second increments.  Whisk vigorously.  Allow the mixture to completely cool and form a solid.  Then using a hand or standing mixture beat the solid into a fluffy and creamy frosting (this takes time).  Once desired consistency is achieved; you are ready to frost and decorate the cake.  The cake melts quickly (I store in the refrigerator then take out an hour or so to allow to room temperature before serving).  Decorate with Paleo approved embelishments!

Paleo Nutella Cappuccino

Ooooh Laa Laa!  This is because I was having a crappy day.  Sure did pep me up.

Ingredients:
Expresso 2 shots brewed
Stevia 1 packet
Almond/Coconut Milk 1/2 cup frothed 
Nutella 1 teaspoon melted

Brew Expresso then sweeten.  Add the Frothy Milk and then drizzle with Nutella.  There's something so comforting about each sip; and the way the Chocolate melts into the Coffee and makes a party in my mouth.  Now I'm happy!!

Paleo Berries and Cream with Nuts

Let's get crackin!  Start off your day with Energy and Fuel that it needs to Perform.

Ingredients:
Berries 1 cup fresh
Nuts 1/4 cup
Dried Fruit 1 tablespoon (Used Cranberries & Dates chopped)
Coconut Cream 2 tablespoons (whip Coconut Cream solids with Vanilla and Agave/Honey/Maple to make Paleo whipped Cream)

Layer and enjoy for Breakfast or Snack and your body will thank you for the Power Boost!

Paleo Beef Butternut Lasagna

Wowza!  Sometimes I even amaze myself with certain recipes.  Folks you are gonna love this one; kept it as simple as possible.  Okay full disclosure I cheated with Provolone cheese but you can substitute Almond/Cashew/Other Paleo Cheese instead.  And try to get the oblong shaped Butternut not the peanut shape as it'll cut better.  

Ingredients:
Butternut Squash 3 cups peeled/sliced in very thin circles
Ground Beef 3 lbs grassfed
Tomatoes 2 cup crushed 
Pepper 1 cup diced any color
Onion 1 medium diced
Garlic 2 cloves diced 
Tomato Paste 2 tablespoons 
Olive Oil 1 tablespoon 
Basil 1 tablespoon dried
Parsley 1 tablespoon 
Sea Salt/Pepper
Smoked Provolone 16 slices

Brown the Ground Beef in a skillet.  Then add the Peppers, Onion, Garlic and continue to cook until Vegtables are translucent.  Add the Tomatoes, Paste, and Spices.  Cook for about 5 more minutes until all the flavors marry.  Set Beef Mixure aside.  Grease a 13x9 inch baking dish with Olive Oil.  Line the bottom with the Butternut Squash circles.  Next layer the Beef and then the Provolone Cheese and repeat all three layers once more.  Bake covered with foil for 35-40 minutes until bubbly golden delicious magic happens!



Paleo Greek Parfait with Berries

Meal and Snack prep is normal if you are trying to stay healthy and fit.  Do two to four at at time to Max out your efforts.  Just like a WOD!

Ingredients:
Berries 2 cups 
Greek/Coconut Yogurt 1 cup
Almonds 1/2 cup sliced
Flax 1/4 cup ground organic
Coconut Flakes 1/4 cup unsweetened 

Layer everything in a mason jar or container and store in refrigerator up to a week depending on freshness of the Berries.

Paleo Slow Roasted Beef Stew

I know, I know it's 100 degrees out in sunny South Florida.  But, my belly needs nourishment.  And you don't wanna see me when I'm Hang-Gry!!!  This makes a Big Ass Batch plus it's ready when you are.

Ingredients:
Beef Roast 5-7 lbs
Sweet Potatoes 2 medium cubed
Carrots 1 cup cubed
Parsnips 1 cup cubed
Onion 1 cup cubed 
Chopped Tomatoes 1 cup all natural
Beef Broth 1 cup
Coconut Milk 1 cup full fat/organic
Green Onions 1/4 cup sliced 
Garlic 2 cloves sliced
Red Curry Paste 1 tablespoon
Tomato Paste 1 tablespoon
Sea Salt/Pepper 1 teaspoon each

Layer Veggies in Crock Pot or Slow Cooker.  Then place Beef Roast on top and add all remaining ingredients.  Cook Low and Slow for 4-6 hours until Fork Tender.

Paleo Sausage Zoodles

Embracing the need to eat more Veggies; so I'm Zoodle-ling the Hell outta Zuccini lately!  Once you start it's like Crack, you can't stop.

Ingredients:
Zucchini Squash 4 large 
Tomato Sauce 2 cups
Sausage 2 lbs all natural organic
Olive Oil 2 tablespoons 
Garlic Clove 1 minced
Basil 5 fresh leaves torn
Sea Salt/Pepper to taste  

You will need a Spiralizer!  They are SO cheap and a great investment.  Go to smile.Amazon.com and chose to support Broward Housing Community Development Corp Inc.  They are a Incredible program for the Homeless.  Amazon will donate a small portion of every order to them at no additional cost.

Okay so Spiralize your Zucchini first.  Then heat the Olive Oil in a large Skillet or wok.  Add the Garlic and cook for a minute.  Drop the Sausage out from the casing into the Oil and brown.  Once Sausage is fully cooked add the Tomato Sauce and heat through.  Add the Zucchini Zoodles and cook for about 2-3 minutes until al'dente.  Add Basil & Spices.

Paleo Jalapeño Cucumber Key Lime Margarita

This is called "The Christine" as it was inspired by her Spicy Jalapeño Infused Water!!

Ingredients:
Tequila 5 shots
Key Limes 1/4 cup juiced
Seltzer Water 1/2 cup all natural (LaCroix Lime used)
Agave 1 tablespoon 
Cucumber slices 
Jalapeño slices

Put all ingredients except Seltzer Water in a Beverage Shaker and shake vigorously until all ingredients are mixed.  Add Seltzer Water and stir.  Serve over ice or straight up.  It has a nice slow kick to it!!

Paleo Strawberry Almond Chia Pudding

Trying different options for My Daily Chia intake.  There are endless possibilities!   Get in your kitchen and PLAY!

Ingredients:
Coconut/Greek Yogurt 1 cup
Chia Seeds 1/4 cup
Stevia/Paleo Sweetener 2 packets
Vanilla 1 teaspoon 
Sliced Almonds 1/2 cup 
Strawberries 1 cup

Mix Yogurt with Chia Seeds; then add Paleo Approved Sweetener and Vanilla.  Allow mixture to set a few minutes in refrigerator.  Top with Sliced Almonds and Strawberries.  So packed with Nutrition!  Perfect for Breakfast, Lunch, or Snack.  

Paleo the Hotdog As the Bun

Many of you have the same issue with kissing the bun; but if so then make you Dawgs as Friggin Phenomenal as possible!!

Ingredients:
Hotdogs Grassfed Organic All Natural
Jalepenos diced 
Sweet Vidalia Onions diced
Sour kraut All Natural
Paleo Chipotle Sauce (see my previous Blog Post for recipe)
 
Split the Hotdog and fill.  Then Lift and Insert!!!

Paleo Tropical Chia Explosion

Same concept as my previous Blog Posts.  I work and commute long hours so having portable options is my only saving grace!  I get bored easy so reinvention is the key to my success on staying clean.

Ingredients:
Paleo Chocolate Chia Pudding (previous post for recipe)
Cashews/Almonds chopped
Banana chips organic/unsweetened 
Coconut Flakes organic/unsweetened 
Berries

Layer and shove you face in to enjoy!  Stores in refrigerator for several days do make ahead.

Glutino Chocolate Cream Cookies crused up int pieces

Paleo OIAJ Chocolate Chia Protein Puddin

I can't believe just how much this tastes like "Real" pudding.  Doubters, go on with your bad attitude but I'm thrilled to have a Protein packed Snack filled with Chocolatety goodness!!

Ingredients:
Almond/Coconut Milk 1 & 1/2 cups
Chia Seeds 1/4 cup organic
Cocoa Powder 2 tablespoons 
Chocolate Protein Powder 2 tablespoons  
Agave/Honey/Maple 1 tablespoons 
Nut Butter 1 tablespoon 
Vanilla 1 teaspoon       
Sea Salt just a pinch 

Whisk all ingredients together and then let stand in refrigerator until thickens.  Best if left overnight.  Give it another whisk or two to make it nice and fluffy.  I was able to make four generous servings out of this batch but then again, I'm a GaVone!  Throw in your favorite add ins such as Fruit or Nuts.
