Paleo Chocolate & Vanilla Cake

Paleo Cake is a Labor of Love!  Once you are done with all of the work you are amazed with how happy you feel.  Cake makes everything better!!

Ingredients Chocolate Cake:
Cocoa Powder 1 cup
Coconut Flour 3/4 cup
Eggs 4 large
Coconut Milk 1 cup
Coconut Oil 1/2 cup
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Ingredients Vanilla Cake:
Almond Flour 2 cups
Coconut Milk 1 cup
Eggs 4 large
Agave/Honey/Maple 1 cup
Applesauce 2 tablespoons unsweetened
Vanilla 1 teaspoon
Baking Soda 1 teaspoon
Sea Salt 1/4 teaspoon 

Mix all ingredients until a smooth batter forms.  Pour into 9 or 10 inch baking pan greased with Coconut Oil. 

Bake both cakes at 325 degrees for 20-25 minutes.  Allow cakes to fully cool before frosting.

Ingredients Chocolate Frosting:
Enjoy Life Mini Chocolate Chips 3 cups
Coconut Oil 1 & 1/2 cups
Vanilla 2 tablespoons 

Melt all ingredients on stove top in pan slowly or in microwave in 30 second increments.  Whisk vigorously.  Allow the mixture to completely cool and form a solid.  Then using a hand or standing mixture beat the solid into a fluffy and creamy frosting (this takes time).  Once desired consistency is achieved; you are ready to frost and decorate the cake.  The cake melts quickly (I store in the refrigerator then take out an hour or so to allow to room temperature before serving).  Decorate with Paleo approved embelishments!
