Paleo Slow Roasted Beef Stew

I know, I know it's 100 degrees out in sunny South Florida.  But, my belly needs nourishment.  And you don't wanna see me when I'm Hang-Gry!!!  This makes a Big Ass Batch plus it's ready when you are.

Beef Roast 5-7 lbs
Sweet Potatoes 2 medium cubed
Carrots 1 cup cubed
Parsnips 1 cup cubed
Onion 1 cup cubed 
Chopped Tomatoes 1 cup all natural
Beef Broth 1 cup
Coconut Milk 1 cup full fat/organic
Green Onions 1/4 cup sliced 
Garlic 2 cloves sliced
Red Curry Paste 1 tablespoon
Tomato Paste 1 tablespoon
Sea Salt/Pepper 1 teaspoon each

Layer Veggies in Crock Pot or Slow Cooker.  Then place Beef Roast on top and add all remaining ingredients.  Cook Low and Slow for 4-6 hours until Fork Tender.
