Paleo Beef and Root Vegetable Stew

Although I live in Sunny Florida, you just can't beat the satisfaction of a Hearty Stew.  Plus it's a One Pot Wonder so what's not to Love!

Ingredients:
Stew Beef 3-5 lbs
Carrots 1 cup cubed
Parsnips 1 cup cubed
Sweet Potato 1 cup cubed
Celery 1 cup sliced
Sweet Onion 1 large sliced 
Crushed Tomatoes 1 cup
Coconut Milk 1 cup full fat/organic
Sweet Pepper 1/2 cup sliced any color
Garlic 2 cloves minced
Tomato Paste 1 tablespoon 
Smoked Paprika 1 tablespoon 
Sea Salt/Pepper 1 teaspoon each

Literally just plop and drop all ingredients into a slow cooker or stovetop pot and stir.  Cook on low for 4-6 hours until all ingredients are tender.
