Paleo Pesto Zoodles and Pork Chop

Zoodles are by far my new obsession!  Healthy and delicious.  I'll keep this Short and Sweet for those of you who actually read My Blog (thank you, I know who you are)!

Ingredients Pesto:
Basil 1 cup packed fresh leaves
Olive Oil 1/2 cup
Pine Nuts 1/2 cup
Lemon Zest 1 tablespoon 
Garlic 2 small cloves 
Sea Salt/Pepper 1 teaspoon each
(Omitted cheese to be strict Paleo but if you do use it try Pecorino or Romano).  

Blend all ingredients together until bright green thick paste forms.

Ingredients Pork Chops:
Pork Chops 4 medium
Paleo Pesto Sauce

Rub Pork Chops with a teaspoon each of the Paleo Pesto Sauce; then grill.

Ingredients Zoodles:
Zucchini 4 large
Yellow Squash 4 large
Paleo Pesto Sauce 1/2 cup
Coconut Oil 1 tablespoon

Using a Spiralizer turn the Zucchini and Yellow Squash into long thin strains of noodles.  Heat Coconut Oil in large Wok or Pan.  Add the Zoodles and Pesto and cook in high heat for less than 4-5 minutes (Zoodle Noodles should be Al'Dente just like Regular Pasta).  Serve with Pork Chops (and I like Sirracha!).
