Paleo Raw Key Lime Pie

Quite the contender this Pie was!  Although Fair Warning; it's labor intensive but worth it!

Ingredients Crust:
Walnuts 1 cup
Almonds 1 cup
Dates 1/2 cup soaked 
Golden Raisins 1/4 cup soaked
Vanilla 1 teaspoon 
Pink Himalayan Salt 1/2 teaspoon 

Soak the Dates and Golden Raisins overnight in water or pop in the microwave with water until soft; then drain.  Grind the Walnuts and Almonds in a food processor until medium even chunks.  Remove Nuts then pulse Dates and Raisins until a smooth paste forms.  Add all other ingredients and pulse until a sticky paste forms (will be chunky).  Evenly press Crust into the bottom of a 10 inch Cheesecake pan.  

Ingredients Pie Filling:
Key Limes 1 cup freshly squeezed juice
Coconut Mik 1 can full fat/organic
Kiwi 1 cup cubed green flesh only
Coconut Oil 1/2 cup
Agave/Honey/Maple 1/2 cup
Coconut Manna Cream 1/4 cup 
Arrowroot Powder 1/4 cup 
Paleo Green Food Coloring 2 tablespoons heated (used steeped concentrated Green Matcha Tea)

Dissolve the Arrowroot Powder in the heated Green Food coloring.  Then simply blend all the filling ingredients until smooth an creamy.  Pour the filling mixture over the crust and place back into the refrigerator to firm up.

Ingredients Whipped Cream:
*Coconut Milk Cream 2 cups (must be full fat/organic cold)
Agave/Honey/Maple 2 tablespoons
Vanilla 1 teaspoon 
Sliced Almonds to decorate

*Put canned organic Coconut Milk in the refrigerator several hours or overnite (about 3-4 cans).  Spoon out the harden solid Cream and whip that with the remaining ingredients until light and fluffy. Spread over the top of the pie, decorate with Sliced Almonds, and Whaa-Laaa!!!
