Paleo Dry Rubbed Chicken

Mad Props to The Dingman's again for teaching us so many Paleo ways!  Got a Instant Pot Pressure Cooker and started to Rock Our World.  Although this recipe has also been made by baking in the oven.

Boneless Chicken Thighs 4-5 lbs
Dried Garlic 2 tablespoons
Dried Parsley 2 tablespoons
Dried Thyme 2 tablespoons
Coconut Palm Sugar 2 tablespoons
Dried Mustard 1 teaspoon
Ground Ginger 1 teaspoon
Ground Curry 1 teaspoon 
Sea Salt/Pepper 1 teaspoon each 
Chicken Broth 1 cup

Toss all Spices and rub all over the Chicken.  Layer the Chicken in the Pressure Cooker and add the Broth.  Cook accordingly (we did ours for 31 minutes as it was 5 lbs).  If baking in the oven use 375 degrees for 30-35 minutes.  So Juicy!
