Cauliflower Pizza

Sausage Cauliflower Pizza for the PITAπŸ‘‘ @backsquatbeauty Recipe: 1 head Cauliflower minced, 1 Egg, 1 Cup Mozzarella (Cashew Cheese), 1TSP Chopped Garlic, handful Basil, S&P to taste.  Micro Cali Rice for 1-2 minutes the squeeze dry with cloth,  mix with remaining ingredients and for a dough. *Dough is fragile & will stick to pan so spray generously or use parchment (found out the hard way!) bake at 350 for about 15 minutes until golden brown then add toppings.  We used @jennieo Turkey Sausage, Peppers, Ted Pepper Flakes.  #pizza πŸ’‹πŸ•πŸ’‹

Watermelon Cuke Mint Lime Margarita Made with @wildshotmezcal

Watermelon Cuke Mint Lime Margarita Made with @wildshotmezcal OMGosh New Fav!  


Blend all fresh ingredients together to taste & you will be in Paradise! 

Watermelon 2 cups 
Cucumbers 1 cup cubed
(freshly blend and strain both)
Limes 3-4 freshly squeezed juice
Mint Leaves a Fist full (or to taste)
Tequila Wild Shot Mezcal 10 shots/jiggers

This picture was taken before I strained everything still delicious but not as pretty. So I recommended straining after you blend. This will get rid of the extra pulp.  For the Mint, use as much as you're comfortable with I like a lot so I blended mine right in but you can add after blending for a more subtle taste.

This is some friggin AWESOME sipping.  You don't feel it in the first one because it's so light and refreshing.  Then BAM!!

Paleo Red Curry Thai Meatballs

IAdmittingly I am notorious for sneaking vegetables in whenever possible!  I took it to another level with these Meatballs.  A Girl's gotta do what a Girl's gotta do ya know.

Ingredients Meatballs:
Ground Turkey 3 lbs organic lean
Sweet Potato 1 cup mashed cooked 
Quinoa 1/2 cup cooked
Peppers 1/4 cup minced any color
Eggs 2 large
Green Onions 2 tablespoons diced
Garlic 1/2 teaspoon minced 
Ginger 1/4 teaspoon freshly grated
Sea Salt/Pepper 1/4 teaspoon each
Cayenne Pepper 1/4 teaspoon

Mix all ingredients and Roll Out into 2 inch Meatballs.  Bake at 350 degrees for about 20-25 minutes until golden brown.

Ingredients Vegetable Broth:
Red Cabbage 2 cups cubed
Peppers 1 cup cubed any color
Butternut Squash 1 cup cubed
Carrots 1 cup proportionate sized
Coconut Milk 1 cup full fat organic 
Vegetable Broth 1 cup all natural organic 
Broccoli Slaw 1/2 cup jullian sliced
Green Onions 1/2 cups
Thai Red Curry 2 tablespoons 
Tumeric Powder 1/2 tablespoons
Ground Chipotle 1/2 tablespoon
Sea Salt/Pepper 1/2 teaspoon each

Either in Crock Pot or in Stove Top slow cook all ingredients until tender.  Serve with Meatballs.  




Paleo Guam Chicken Kelaguen Mannok

This recipe was Inspired by Diners Drive Ins and Dives on the Food Network.  It's REALLY addicting and so light and refreshing.  Just in time for Shredding Season.  Tag me if you make it!

Ingredients:
Chicken Cubes 2 cups cooked
Coconut Shreds 1 cup large chunks
Peppers 1/2 cup diced any color
Green Onions 1/4 cup (or Chives)
Limes 2 medium freshly juiced
Lemon 1 medium freshly juiced
Agave 2 tablespoons organic
Coconut Aminos 2 tablespoons (Braggs)
Ground Chipotle 1/2 teaspoon 
Sea Salt/Pepper to taste

Seriously Easy: Toss all ingredients together and your done.  Tastes much better after it has time in the fridge so it's a perfect make ahead Meal Prep dish.

Protein Brownie Muffins

Our Daughter @backsquatbeauty was finally released to lightly workout after battling torn retinas in both eyes.  Unexpected emergency surgeries over the past months so I haven't been able to cook let alone blog.  But upon her special request to help fuel her workouts I created this powerhouse recipe.  And best part is you can just throw everything in the blender!

Ingredients Muffins:
Coconut Flour 1 cup organic
Chocolate Protein Powder 1 cup
Egg Whites 1 cup
Applesauce 1 cup organic unsweetened 
Coconut Palm Sugar 1/2 cup
Almond/Cashew/Coconut Milk 1/2 cup
Cocoa Powder 1/4 cup unsweetened 
Coconut Oil 2 Tablespoons organic
Vanilla 1 Tablespoon organic 

Pop in blender and pulse until smooth; then pour into 12 lined muffin/cupcake tins. 

Ingredients Toppings:
Enjoy Life Mini Chocolate Chips 
Sliced Almonds.

Top with Toppings and bake at 325 degrees for 12-15 minutes.

Paleo Pancakes with Almond Butter & Apples

Brunching never felt so good.  It's tough with everyone around you eating whatever they want.  So, if I want it then I have to invent it Paleo-fied.  One critical point to make is how delicate these Pancakes are.  Don't fuss over them or try to flip too early.  Just wait for it....

Ingredients:
Coconut Flour 1/4 cup (used Bobsredmill)
Egg Whites 1/2 cup
Almond Milk 1/4 cup
Vanilla 1/2 teaspoon
Pumpkin Spice 1/4 teaspoon
 
Whisk all ingredients together and let sit a few minutes to allow the Coconut Flour to fully expand.  Pan fry on a skillet or nonstick pan in Paleo Oil of choice (only need a tiny spritz).  Makes about 6 normal sized Pancakes.

Ingredients Apples:
Apples 2 large any kind cubed
Lemon juice 1 tablespoon fresh squeezed
Coconut Oil 1 teaspoon
Almond Butter (used Justin's Maple)

Pan fry Apples with Coconut Oil and Lemon juice until golden brown and naturally caramelizes.  Serve on top of Pancakes with Justin's Maple Almond Butter.

Paleo Quinoa Amaranth Veggie Bowl

Hands down one of my favorite go to meals lately.  Still a lot of trial and error battling Crohns and whatever else is going on internally (stupid doctors are no help).  Although traditionally these grains not always on the recommended list for AIP, I'm finding that the nutritional benefits are amazing (if you can tolerate it)!  Look up all the health benefits of Amaranth.  Of course, as Always....Glutenfree.

Recipe:
Kale 1 cup cooked & chopped
Quinoa 1 cup cooked
Amaranth 1/2 cup cooked
Hemp Seeds 1/2 cup
Ginger 2 tablespoons chopped
Turmeric 1 tablespoon 
Carrots 1 cup chopped
Peppers 1/2 cup chopped 
Sliced Almonds 1/2 cup
Coconut Chips 1/2 cup
Beets 1/2 cup
Mandarin Oranges 1/2 cup
Coconut Aminos 1/4 cup
Apple Cider Vinager 2 tablespoons
Sea Salt & Pepper to taste


Paleo Maple Nut Mug Cake with Dark Chocolate & Nuts

Recipe: @bobsredmill Almond Flour 2 TBSP, @justins Maple Almond Butter 1 TBSP, 1/4 TSP @illy_coffee Expresso powder, 1 Egg, 1/4 TSPN Sea Salt whisked together until fluffy.  Micro 1 minute in ramekin.  Top with Dark Chocolate & Nuts, then 😝DEVOUR! #hangry

Paleo Pecan Strudel Cake

Paleo Pecan Strudel  Cake Recipe: @bobsredmill Almond Flour 1 cup & 1/4 cup Coconut Flour, 2 Eggs, 1/2 cup Almond Milk, 1/2 cup Coconut Oil melted,1/4 Cup Agave, 1/4 cup @justins Maple Almond Butter, 1 TBSP Vanilla, 1/4 TSP Aluminum Free Baking Powder & Sea Salt = Mix & Pour into greased 8x8 Pan, Top with mixture of crushed Pecans, Coconut Palm Sugar & Almond Flour.  Bake at 325 degrees about 15-20 minutes until good enough brown.  πŸ˜ENJOY!

Quinoa & Gluten Free Oatmeal

Made with @bobsredmill Glutenfree Oatmeal!

Ingredients:
Quinoa 1/4 cup organic
Oatmeal 1/4 cup
Almond/Coconut Milk 1/2 cup
Hemp Seeds 2 tablespoons organic
Sliced Almonds 2 tablespoons organic
Agave/Maple/Honey 1 teaspoon 
Assorted Berries

On stovetop cook the Quinoa and Oatmeal until tender.  Add remaining ingredients and top with Berries!
