Paleo Red Curry Thai Meatballs

IAdmittingly I am notorious for sneaking vegetables in whenever possible!  I took it to another level with these Meatballs.  A Girl's gotta do what a Girl's gotta do ya know.

Ingredients Meatballs:
Ground Turkey 3 lbs organic lean
Sweet Potato 1 cup mashed cooked 
Quinoa 1/2 cup cooked
Peppers 1/4 cup minced any color
Eggs 2 large
Green Onions 2 tablespoons diced
Garlic 1/2 teaspoon minced 
Ginger 1/4 teaspoon freshly grated
Sea Salt/Pepper 1/4 teaspoon each
Cayenne Pepper 1/4 teaspoon

Mix all ingredients and Roll Out into 2 inch Meatballs.  Bake at 350 degrees for about 20-25 minutes until golden brown.

Ingredients Vegetable Broth:
Red Cabbage 2 cups cubed
Peppers 1 cup cubed any color
Butternut Squash 1 cup cubed
Carrots 1 cup proportionate sized
Coconut Milk 1 cup full fat organic 
Vegetable Broth 1 cup all natural organic 
Broccoli Slaw 1/2 cup jullian sliced
Green Onions 1/2 cups
Thai Red Curry 2 tablespoons 
Tumeric Powder 1/2 tablespoons
Ground Chipotle 1/2 tablespoon
Sea Salt/Pepper 1/2 teaspoon each

Either in Crock Pot or in Stove Top slow cook all ingredients until tender.  Serve with Meatballs.
