Protein Brownie Muffins

Our Daughter @backsquatbeauty was finally released to lightly workout after battling torn retinas in both eyes.  Unexpected emergency surgeries over the past months so I haven't been able to cook let alone blog.  But upon her special request to help fuel her workouts I created this powerhouse recipe.  And best part is you can just throw everything in the blender!

Ingredients Muffins:
Coconut Flour 1 cup organic
Chocolate Protein Powder 1 cup
Egg Whites 1 cup
Applesauce 1 cup organic unsweetened 
Coconut Palm Sugar 1/2 cup
Almond/Cashew/Coconut Milk 1/2 cup
Cocoa Powder 1/4 cup unsweetened 
Coconut Oil 2 Tablespoons organic
Vanilla 1 Tablespoon organic 

Pop in blender and pulse until smooth; then pour into 12 lined muffin/cupcake tins. 

Ingredients Toppings:
Enjoy Life Mini Chocolate Chips 
Sliced Almonds.

Top with Toppings and bake at 325 degrees for 12-15 minutes.
